Ingredients: to make 9 Niu Rou Bing
Dough:
all purpose flour 450 g 3 cups
oil 24 g 2 tablespoons
salt 2 g 1/4 teaspoon
dietary alkali (food alkali) less than 1 g 1/8 teaspoon (optional)
water 230 g 3/4 cup +3 tablespoons (Adjust the amount of water to make a medium firm dough)
Fillings:
ground beef 300 g
Sichuan peppercorn powder 1 g 3/4 teaspoon
five spice powder less than 1 g 1/4 teaspoon
chili powder less than 1 g 1/4 teaspoon
salt 4 g 1/2 teaspoon
ginger paste 10 g 1 teaspoon
oil 12 g 1 tablespoon
green onions 250 g
Oil mixture:
all purpose flour 35 g 1/4 cup
oil 50 g 1/4 cup

作为土生土长的西安人,牛肉饼刚出炉的那股酥脆,镜糕的香甜,肉丸胡辣汤和烧饼的搭配,还有最常吃的早餐-韭菜盒子,在您这里都可以找到。真是太赞了,暖暖的乡情.

小高姐,我请教您一下,为啥每次我活得面都筋性特别强,总是赶开就缩回去
關於碱面小高姐在她做饅頭那集有回答(谢谢小高姐) 我转贴她的回答: "好像很多人在海外,买不到碱面。歪果仁超市一般没有,中国人的超市可能性大一点。买不到也没有关系。可以用等量的baking soda代替。把baking soda 用热水冲开。看到气泡散尽,剩下的水就是一样的碱水了。baking soda 是碳酸氢钠,碱面是碳酸钠。碳酸氢钠预热会发生热解反应,生成碳酸钠。如果一次想要比较多的碱面,可以把baking soda放到烤箱里350F烤半个小时。成品就是中国超市买来的碱面了。同样也是利用baking soda遇热分解的原理。" *後續,谢谢小高姐再次实验後,又贴心补充两点,我再转贴,使她辛苦不白費: “1. 在这个配方中,这个碱面是可以有,也可以没有的,口感上差别很细微。家里如果没有碱面的话,不放也没有关系。 2. 上次在馒头视频下面的留言中提到把小苏打放到烤盘中,350° F/175° C烤半个小时来自制碱面。但是烤出来颜色有点偏黄。我后面又试了几次,其实不需要那么高的温度。200° F/95° C,烤半个小时。烤好之后,关火,但是不要拿出来,把烤盘放在烤箱里慢慢放凉。烤出来的成品和超市里买来的碱面,颜色和质地都非常相似。” 再後續: 謝謝精益求精的小高姐, 她有視頻告訴大家如何在家自製碱面, 讓人怎能不喜愛她 kzread.info/dash/bejne/dGxhlqmBds3OdLw.html

每回看小高姊的影片,常常讓我忍不住手癢試作~ 今天特地到市場買了黃牛肉絞肉,做了5個餅,雖然手殘爆餡,但內餡味道好,皮薄又脆,兒子都說比外面的餐館做的好吃呢! 謝謝小高姊的分享❤

Yes it is! Actually it is because they probably all originated from the same idea! This dish in the video is actually a recipe from the Hui people, they are adherents of Islam and they are the largest ethic minority in China, clearly they brought this recipe over and gave it a twist!

四川的牛肉锅盔做法跟这个也差不多,只不过我们炸金黄后还要还要烤,而且不加葱

she said if you put baking soda in the oven under 95 C or 200 F or half an hour, it's food alkali. You can try that.

可以直接烙熟。只是口感上不同。如果觉得油太多。可以放到烤箱里烤。烤好后,稍微刷薄薄一层油 。也会酥脆
