FOOL ‘EM “CREAM CHEESE” SPINACH-ARTICHOKE DIP (from The Vegan 8 cookbook, shared with author’s permission)
* 1/2 cup (80g) finely diced yellow onion
* 3 large garlic cloves, minced (10g)
* 10 ounces fresh spinach, chopped into smaller pieces
* 1 (14-ounce) can artichoke hearts, drained well
* 1 cup (240g) plain, unsweetened dairy-free yogurt (Brandi recommends So Delicious unsweetened coconut yogurt; does not recommend low-fat or almond yogurt)
* 1 1/2 TBSP (23g) distilled white vinegar
* 1/2 cup (75g) raw, unsalted cashews
* 1/2 tsp (3g) fine salt
* 1/2 tsp (2g) ground black pepper
* 1/2 packed cup (110g) cooked, peeled Yukon Gold potato
* OPTIONAL: red pepper flakes, for garnish, pita chips or veggies for serving
1. Add the onion, garlic, and 5 TBSP (75g) water to a small pan over medium-low heat. Bring to a simmer, and cook 5 to 8 minutes or until tender, stirring occasionally.
2. Add the spinach to the pan in small batches, stirring and tossing the spinach until it is well cooked and wilted before adding the next batch. Repeat until all the spinach is cooked well. This will take about 10 minutes. Turn the heat off.
3. Preheat the oven to 375F (190C).
4. Roughly chop the artichokes into quarters. This will release lots of liquid, so drain the excess. Squeeze out the excess liquid so it doesn’t end up watery. Add the artichokes to the cooked spinach mixture, and set aside.
5. Add the yogurt, vinegar, cashews, salt, and pepper to a high-powered blender or food processor. Add the potato to the blender, blend on high until completely. smooth. Scrape the sides if needed, and blend once more. Pour over the spinach and artichoke mixture and stir to combine well.
1. NOTE: if you don’t have a high powered blender like a Vitamix, you’ll need to soak your cashews in warm water overnight, and then drain, rinse, and proceed.
6. Pour the mixture into a 9-inch cast-iron skillet, pie dish, or an 8-inch square baking dish. Bake for 25 minutes or until the top looks firm and set and is bubbly. Let cool for 5 to 10 minutes. For a kick, add some red pepper flakes on top before serving with pita chips or veggies.

    I think she was trying to support lesser known vegan YT'ers. Avantgardevegan and Pickuplimes have a pretty big platform already. Just checked. They both have followers in the millions while the ones she showcased are much smaller.

    I love how you show how clumsy you are. It shows how we can really be in the kitchen. Not so neat and perfect. Also I’m enjoying your instant pot cookbook!!!

    Marcello Rusciano I seriously doubt it. Nisha is adorable and full of joy that she shares w/us. And as for not being vegan, you don’t have to be. Just have some vegan meals now & again. Nisha has vids on what’s in her pantry. Start w/the dry goods & store them in mason jars. Then get the liquids like Tamari soy sauce. Most of the pantry ingredients have a long shelf life.

    My whole family LOVES your Instant Pot cookbook!! My daughters and I watched a few of your KZread videos and all agreed we needed to buy your cookbook. We've been making a recipe a day and everything has been so good. We are not fully vegan but try to eat plant based as much as we can.

    What a BOMB video idea! Honestly, I love how you're thinking about us(and making videos) while managing such a big change in your life! Also, the concept is just phenomenal! Invariably fun and inspiring but at the same time enjoyable for you to make in spite of time shortage :D Side note: I can NEVER stick to recipes, but seeing you succeed makes me want to try some recipes now :D I love experimenting, but not without a reason recipe developers make many tests before coming up with the final version :D .     OMG your spinach artichoke dip is AMAZING!!! I will be buying your book! I had my grown sons and husband try it and they loved it!     I just went vegan due to a 30-day challenge through my church. I just found your channel. I am learning a lot and really enjoy your videos. I love how real you are in your videos. Most people will edit their videos if they make mistakes. I love that you don't do that. It makes you real and easier to relate to.

    Thank you so much for doing this video! I really want to get The Vegan 8 book now! I made cashew yogurt yesterday and I had spinach I had to use so I decided that the spinach artichoke dip would be good. So easy and so GOOD! My husband and my youngest son who is 26 said it was really good! I was eating it before I baked it. LOL Now I have to try to other two!

    Your channel is one of my favorites, Nisha. I love your personality and sense of humor. I've only tried one thing so far from your channel, but look forward to learning and trying more. I tried the sesame turmeric based sauce (from another video). It goes well with everything! :) Tried it on roast chickpeas and added it to a 'garden of vegan' meal I had delivered, which was mostly a salad with black bean noodles. Sometimes when it thickens up, I use it as a "cheese". Thank you for teaching cooking in a way that makes it fun and enjoyable. :)

    I recently used my air fryer to fry my tofu when I made Asian sweet 'n sour tofu. It worked GREAT and got the tofu nice and crispy before adding the sauce. Thanks for introducing us to other vegan bloggers/vloggers. I look forward to trying these new recipes.

    Two for two! I made your lentil curry and it was my best curry ever and I tried the tofu recipe in this video (I know it was not your recipe but your videos are so clear that I easily followed along) and it was awesome! As a hit-or-miss cook, 2 attempts and 2 successes is huge. I love your channel, Nisha! Glad I subscribed and I will keep watching😁. (You give me a belly laugh in almost every video, which I also appreciate!)

    I make a suuuuuper similar crunchy tofu dish pretty regularly for my omnivore hunky, who genuinely loves it MORE than I do, and actually requests it. Anyway, a couple of tips! If you have any of those plastic bags that veggies come in from the store, save them! After I cube my tofu, I put them in one of those bags, drop in the starch, and fold over the opened end a couple of times so it’s basically a giant pocket of air, gently shaking the whole bag to coat. Totally mess-free for your hands, and keeps all the cubes nice and happy! Also, if you have an air fryer, you can cook the tofu in there. Rather than putting oil in a pan, I add maybe a glug or two of oil to my shaker bag with the starch. Then I basically twice-fry it in my air fryer to get it EXTRA crispy. Once at 360°F for like... I dunno, 25 minutes, flipping at some point, and then again at 380°F until it’s extra crispy all around. I prefer this cuz I’m real bad at frying things in a skillet because I find it tedious, exhausting, and not in my wheelhouse. =>.

    Haha i would totally have included it but we didn't have the camera rolling when it happened. the stain has mostly come out - there's a very faint stain but it's not visible unless you're closeup. Thank you for the warm wishes and I'm sure you'll love the sweet potato soul cookbook!

    I love how beautiful the food you cook is and I love your flavor profiles! I have been vegan for 15 years and I am still trying to find a vegan quiche that blows non-vegans out of their mind at #brunch. I'm not a fan of processed food (esp cheese, unless cultured like Cultured Kindness or Miyoko's) so I appreciate your leaning toward creating from whole foods! TY!

    Oh wow! These all looked so good. I too like cookbooks that tell stories abt the recipe & more as Janae does in her cookbook which I love. I only knew of her so thnx for the intro to the other two vegans; you’re a good soul for sharing their info. The Korean dish was specifically requested by Max & you said you were eating the entire bowl.     RainbowPlantLife Nisha, I forgot to mention that that’s one of the reasons I love your cookbook-the stories. I also love cookbooks that have a photo w/the recipe as yours does. I hope someday when things settle down that you’re able to compile a cookbook w/those characteristics that doesn’t use an IP but your other recipes & compiles your PDFs along w/pics & stories. Speaking of your IP cookbook, are the measurements for a 6 qt IP? My mom has a 3 qt one that was gifted to her & I got her your cookbook but I’m not sure abt the measurements she should use. Hope this isn’t a dumb question that you answered on page one in bold in your cookbook. 😂 ~m🤟🏼

    For a Cali housewarming gift for yourself you should get the Complete Collection of the B&B spices, then do a video series on how you incorporate some of the more unusual spices into your dishes. This is a series I would loveeee then I would have a good excuse to buy a $255 set of 32 spices lol.
