People complaining about the lack of salt - you obviously season this after it’s cooked. Adding salt before it’s cooked, when everything’s densely packed in a roasting tin, would ruin the texture as the salt leeches the liquid out. With traybakes like this, it’s best to add salt (and pepper) afterwards.

One of the most important cooking tips I learned is that the first step to working with raw chicken is to prepare your kitchen. Set the oven to the right temp and get a bowl with water and a dash of bleach in it and a wash cloth. Have towel handy. Once you've got all the things ready, prepare the chicken (cut, season, truss, whatever) and put it in the pan. Then wash your hands and clean your board and counter with your disinfecting water solution. Wipe your hands clean and then put the chicken into the hot oven. This is a wonderful recipe, and reminds me of a Greek style chicken.

Actually if you roast properly with the right ingredients you probably dont need to season chicken for the caramelized salty flavor. Theres salt in the lettuce anyway.
What would you recommend as an option if I did not want to use wine?

Hi😍can you include some soft drinks please...

Nice
What kind of lemons?
Yep, tried this last night, chicken came out the consistency of sand , same time , lower temperature even ... I'd say 1 to 1.5 hours no more for this recipe, anything more and you're drying up the meat completely

What is the translation of the heat settings for US use? What is "gas mark three"?

Gas mark 3 is when you can’t hold your head in the oven more than 3 minutes

For all the people complaining about seasoning let me just tell you that I made this recipe just as she described it and it turned out exquisite. I didn't even need to add salt later.

I made this when I first saw the recipe, and I haven't stopped. May have made it twenty or thirty times - I can't remember.

PS because it's delicious and effortless and forgiving - but there is one thing that I do differently: I take the lemon pips out!
Do you ever add seasoning as you cook?!?!

The alcohol evaporates, its mainly for flavouring. You can use stock instead if you prefer
