The flat iron steak is proving 'en vogue' in the beef stakes.
This cut, which comes from the shoulder of the cow and is cut with the grain, takes to marinades like a good 'un, is unbelievably tender and can be cooked in a multitude of ways!

I tell ya what! A Flat iron steak in the sous vide, 3 hours @ 128 degrees, followed of by 30 seconds each side on a super hot grill for browning/searing..... Some of the most tender, juicy and tasTy steak ever! Rivals ribeye, at a quarter the price.

I bought my Anova sous vide cooker for less than $100. There are additional costs, though. You need a good vacuum sealer, and vacuum seal bags. But these are not expensive.

Robert Zeurunkl I use the water displacement method when I do sous vide. It does wonders with getting a steak and roast to a perfect rare to medium rare.
