素娘惹阿杂和没素的口感差别不是很大,都一样那么好吃,今天是来做素的。其实自己煮”Acar”并不难,是比较多准备的工作,它的好处就是想要吃什么就放什么,加糖加醋可随着自己口味的来调制。
材料A:
150g 包菜
5-6条长豆
1条 黄瓜
1条 红萝卜
1/4粒 黄梨
材料B:(全部一起搅烂)
石古仔-6粒
黄姜-4cm
南姜 少许
调味料:
4汤匙 辣椒煳 (可以用现成包装的)
5汤匙 糖
5汤匙 白米醋
1小茶匙 盐
半小 碗烘香花生(搅碎)
2大匙 炒香芝麻
做法:
1.把所有材料A洗净后,切成条状型。黄瓜和红萝卜用盐腌制1小时,过水。长豆和包菜需要川烫,把全部材料用布抹干,备用。
2.放适量油,小火把材料B爆香后,加入辣椒煳搅拌均匀。
3.拌炒片刻,放入调味(白米醋,糖和盐)
4.顺序加入包菜,长豆,红萝卜,黄瓜,拌炒,最后放入黄莉,拌匀,熄火。
5.最后洒上花生碎和芝麻拌匀。(也可待凉后放入冰箱冷藏)

Today I make Vegetarian Acar. In fact, it is not difficult to cook "Acar" by yourself. It is more preparation work. Its advantage is that you can put whatever you want to eat. You can add sugar and vinegar to make it according to your own taste.
Ingredients A:
150g cabbage
5-6 long beans
1 cucumber
1 carrot
1/4 pineapple
Ingredients B: (all blend together)
6pcs Candlenut (Buah Keras)
4cm turmeric(kunyit)
A little Galangal
Seasoning:
4 tablespoons chili boh
5 tablespoons sugar
5 tablespoons white vinegar
1 teaspoon salt
Half a small bowl of roasted peanuts (crushed)
2 tbsp sautéed sesame seeds
Practice:
1. After washing all ingredients A, cut into strips. Marinate the cucumbers and carrots with salt for 1 hour, and let them pass in water. Long beans and cabbage need to be blanch, dry all the ingredients with a cloth, and set aside.
2. Put an appropriate amount of oil, saute Ingredient B with a low heat, add chili and stir evenly.
3. Stir fry for a while, add seasoning (white vinegar, sugar and salt)
4. Add cabbage, long beans, carrots, cucumbers in sequence, stir fry, and finally add pineapple, mix well, and turn off the heat.
5. Finally, sprinkle with chopped peanuts and sesame seeds and mix well. (You can also put it in the refrigerator after cooling)

Hi, I noticed you're using galangal, tumeric, lemongrass and candlenuts. Where are you from......Indonesia or Malaysia, Thailand or Singapore? Those are common ingredients used in these countries cooking.

超市买的cili boh,但是要注意一下,如果吃素的,留意一下看包装有没有加蒜,有几种的,如果要自己打,就6条辣椒干(泡软),2条大辣椒一起和香料打烂就可以了。

如果没有辣椒糊,你可以在搅拌其他材料时,直接加入4调红辣椒和3条辣椒干,一起打成糊。

Dear Shadajie. Recipe kamu saya sudah tukar jepada taraf yg lebih tinggi, lengkap danl mutu lebih sempurna..di kuah Acar ini.. Udang kering rm 10 goreng dan taruh dalam Acar tersevut, kacabg tanah tukar kepada buah jangus. Dan di atas saya bubuh kulit babi yg rebus dan pitong harus dan bubuh di atas buat perhiasan..
