Took 4 days to watch this. I fall asleep all the time
This has been the VERY BEST pizza dough recipe I have ever found. I bought some semolina flour at a middle eastern style store. The semolina made the biggest difference in working with this dough. I don't have to look any more for the perfect recipe. THANK YOU!!!!! Only one difference, I baked my "boli @ 350F instead of the high heat.

Can’t wait to make this dough! Would King Arthur all purpose or 00 pizza flour best option?
I don’t have a mixer so I mix by hand and knead. So do you think you could do a video on how to mix and knead the dough by hand? I usually knead it for ten minutes but the outcome is always different. From one calabrese to another, ciao

1:54 I vote, "intents and purposes" (just for clarity).
I have followed these instructions explicitly and have had nothing but trouble with this yeast. So I stick with the regular yeast. I even received an answer from red star about my last comment. So I made sure I follow that thing still did not turn out right.
the diferential in yeast is 3 to 1, if you need 7g dry yeast, it will be 21g fresh yeast...ty
can we get more details on the additives in this yeast?

Hi Lily, Platinum yeast contains yeast, xanthan gum, ascorbic acid (vitamin c), sorbitan monostearate (emulsifier), and enzymes. (dough improver agent) You can find additional details on the product page: redstaryeast.com/red-star-products/platinum-yeast/
7g of dry active yeast is like 21 grams of live yeast. 1 packet you can use 24 cups of flour. or 3 kilo's. you have about 3x the yeast you need in that dough in order to have it properly digestable.

Confused about water temp. Package says between 120-130. You said 80.
