I've been looking for a great place that makes pizza the way I remember it when I eat it last in Naples... I was 18 and now I'm 71 and has always longed for the great tast of poolish pizza. I'm a new subscriber here and I love this channel. God bless you my son.

Im almost your age and been making my own bread and pizza every week since I was 16 years old. My grandmother, born in 1889 taught me.

@@eckankar7756 It's a joy to make bread and pizza dough. Like you, I had a grandmother who showed us children ways to make things. She was born in 1881- my father was born in 1922, the youngest of 12 children. She passed in 1962 at the age of 81 yrs old. I was twelve. Thanksgiving has never been the same ;)

@@JLPrice-kc2uy My grandmother made it to 104, had the cat not tripped her at the top of the stairs she would have lived longer. I still want to figure out how to make videos on youtube to teach what I still remember. I still can my own soups, stews, meat, jams and jellies. Up until the pandemic I was teaching home canning at university skill fairs and at the local Fry's Grocery store (Kroger on the east coast) None of my friends cook so they find ways to invite themselves over for dinner, which I love. When I serve a meal they look at me like I'm half crazy and half magician. Maybe I am. I'm 69 years old and still work full time as an RN. I just don't stop. I only rest while bread is rising.

then make your own doughs. about 1 hour i make 1 poolish for tommorow and biga for a Foccacia and pizza in 2 days. I need 10min to make it.

1.) favorite fillings....ricotta, mushroom, & ham, is always a good one! 2.)Issues...? I had an issue where the edge of the calzone was a little under cooked (cause of the rolled up seal I did) where the rest was golden, craunchy & ready!

i love to overload it i learned and loved it like : extra cheese, extra tomate sauce, hot salami, minced meat, peperoni (hot pepers), mushrooms and in the old version even Prosciutto but that i leave out when i make it myselfe. its my favorite kind of pizza and i only love it selfemade because its the only way i get it tastes exactly how i eat it first time !

Witch poolish dough recipe was that? I tryed the one he did with Roberto Susta Biga vs Poolish, and used Caputo Cuoco on both, Biga got perfect, but the poolish got tasteless..

Everything was explained easy, I can't wait to make it. Viti you are one of the BEST!!!!

I have just made my own wood fired pizza oven, and it will be ready to use in about a month. This is at the top of my list of pizzas to make, looks simply amazing, great video.
