never had lamb at a Chinese restaurant when I was a kid. plenty of it now, mostly sliced shoulder or leg served with cumin and onions. pretty good. as far as the lamb in this vid - rib chops, the Cadillac of lamb, nothing beats xtra thck grilled rare

Spring Lamb chops - nothing finer for taste on an Australian plate imo. All the boof eaters out there don't bother contradicting I've eaten beef including wagyu on 4 continents over 60 years and still come back to spring lamb for flavour Ozzie or NZ nearly the same high quality depending on the grass region.
