    A German from Saxony here. Very awsome butchery. I don't think, there can be any complains about the products. And a great respect to the Mr. Ishii. What a hard working man. And to the master himself and all his other employees too of cause.👌 I love Japan since I was 11 years old and it took me till I was 40 years old to visit this beautifull country. Next year I turn 46 and hope to manage to visit Japan for the third time. 🇩🇪🍻🇯🇵

    As a german i can say this man is a grandmaster of his profession and it's a pleasure to see that he evolved his studies from germany. He can mess with every butcher in my country... in the world. Very impressive!

    When I see someone in one Country making traditional foods from another Country, I am happy to see it and I am sure the customers are very happy too. Making some national recipes are hard to do because either you cannot get all of the ingredients you need, or you need some sort of a specialized kitchen equipment or that it is just so labor intensive that you don't want to undertake the challenge. This where a specialty shop like this comes into play and it is all made in a homestyle fashion, just on a larger scale. I have a German friend of mine here in Thailand that bakes authentic German breads, and he lives about 1hr 20mins away by train. But I can place a big order with him, and he will meet me at the train station and give me a tour of his city and show me his operation and we have a nice lunch and beers together and then he sees us off on a bus home with all of the goodies he baked for us and I am as giddy as a kid finding a 4-leaf clover. You just don't get service like that except at a home-grown operation from someone that is putting passion into their foods. I would spend a lot of money in a place like this and stock up and visit often. Decades ago we had a small German bakery/Meat place that opened in an old convivence store location that did it all like this, but on a smaller scale and made authentic German desserts too, it was a fantastic place to visit and spend my money. But sadly she closed. I have an authentic Mexican restaurant run by an older woman and her family that is to die for and also a great Asian food store that does things similar, but on a smaller scale too. So, if you have any places like that in your area, even if you have to travel some distance, it will be worth your while to visit, purchase and get the real deal from them no matter what Nationality of goods they are producing. Recently in my city, an Eastern European store opened that carries sausages from Poland, Cheeses from Bulgaria and Wines from Ukraine just to name a few and I can drop $200 USD very quickly Ha ha.

    I really appreciated the way Hata San explained the yse of the natural casings and why there may be some faults . His sensei in Germany must be filled with pride to see how Hata San is putting all he learned into practice, passing his knowledge on . A great video. Thankyou .

Long live the Japanese culture that sets the standard of near perfection (if not perfection) worldwide in a "sad world" of mass production.     Awesome and delicious. And he even does Fleischkäse!😊 Weißwurst needs a lot more parsley for my taste but to see my German Wurst is done in Japan fills my heart with joy! Japanese meat always looks like really high quality, love that too.

    As a person who love Sausages, i live in Denmark. I always grill my sausages before eating, i know they are smoked, but i do grill them insted of boiling them. i Think the taste is so much better and the crispy skin takes it to the next level.

    Knackwurst is already crispy. If u grill it, you destroy it. It has to be cooked. Weisswurst is simply made this way to be cooked an this is how its meant to be prepared (its form Bavaria) And Frankfurter should not be either grilled or cooked. Bratwurst, Thüringer etc. are made to be grilled.

    소시지는 아니지만 1년에 목우촌에서 명정때 선물용 햄이 선물세트로 나오는데 그건 진짜 맛이 있음 일반 시판용이 아닌 진짜 고기가 십히는 햄!

    젊은시절 독일에서 찍으신 사진이 인상적이네요 이분을 제가 직접 뵙는건 힘들겠지만 영상을 보면서 몇가지 궁금증이 떠올랐는데 1. 맛있는 소세지를 만드는 공정에있어서 독일 이외의 나라에서 환경적인 불리함이 있는지 2. 제빵에서 빵반죽에 들어가는 물의 맛이 빵의 맛에도 영향을 끼친다고 들었습니다 영상에서 치즈소세지 반죽을 만들면서 얼음을 많이 넣었는데 특별한 얼음인지 궁금하네요

    Master of his craft for sure, BUT that Leberkäs/kas (or Fleischkäse/kas if without Liver, though we call that Leberkäs aswell) needs a brown crust on top, makes it more delicious. The Käs/Kas originates from its square bread loaf shape, so for me the boxy shape is a must, the slab just isnt it. Personally wouldnt boil the sausages, apart from the White Sausage, but grill them over charcoal. Non the less, would love to try his sausages, a lot of love and attention to detail goes into them. I wonder why he takes meat with high fat content for his jerky. Its counterproductive since the fat spoils faster than the meat.

    Колбаски с такими кусками сыра - это, должно быть, очень вкусно! И очень вредно... Правда, мы делаем колбаски на углях, типа BBQ. Очень вкусные колбаски в Таллинне в двух местах: на рынке Ситси и в Нурменуку. Ну, ещё там шашлык, конечно. Всех видов. И курица. Всё очень вкусно!
