Nevada Day Cookies

STATE OF NEVADA NUT COOKIES
1 cup margarine, softened
1 teaspoon salt
1 1/2 cup brown sugar, packed
1 teaspoon vanilla extract
1 egg
2 1/2 cup all-purpose flour
3/4 cup finely chopped pinion nuts or pecans (optional)
Preheat oven to 350 degrees. In a large mixing bowl cream margarine, brown sugar, salt and vanilla together until light and fluffy; add egg and beat well. Stir in flour and nuts. For easier handling cover bowl and refrigerate for one hour. Roll a portion of dough on lightly floured counter top to 1/8 inch thickness. Cut dough into rectangles measuring about 2 x 4 inches. Cut each rectangle on an angle so as to resemble an outline of the State of Nevada. Using a spatula, lift each cookie onto an ungreased cookie sheet. Repeat process with remaining dough. Bake at 350 degrees for 12-15 minutes or until edges are lightly browned. Remove cookies from oven to cool on cake racks. Makes about 3 dozen cookies.
