Oatmeal Chocolate Chip Cookies
1 1/2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon sea salt
1 cup butter (room temperature)
1 cup light brown sugar (packed)
1/4 cup sugar
2 large eggs (room temperature)
2 teaspoon vanilla
3 cups rolled oats
2 cups chocolate chips
In a medium bowl whisk flour, cinnamon, baking soda, and salt. Set aside.
In the bowl of an electric mixer beat butter and sugars on medium high until pale and fluffy (about 3 minutes). Add eggs one at a time to butter mixture, fully incorporated. After each addition beat on high for 1 minute. Add vanilla.
Turn mixer to low and add flour mixture, mix until combined. Add oats and chocolate chips. Mix until just combined.
Chill dough in the refrigerator for an hour.
Preheat the oven to 350 degrees and line a baking sheet with parchment paper. Using a small cookie scoop, place cookies on the baking sheet 2 inches apart. Bake for 10 minutes or until edges are lightly browned but the center is still soft. Cool for 5 minutes on a baking sheet then transfer to a cooling rack to cool completely.
*If you want raisins you can swap for chocolate chips.
Homemade Vanilla
1.75 L Vodka (I use Kirkland)
10 - 15 Vanilla Beans
Slit the vanilla beans and add to the vodka. Place the vodka bottle in a cool, dark place. Shake once a week. Let set for at least 8 weeks.
Once vanilla is ready to use, pour into smaller container.
