Nabeyaki Udon(for 1 serving)
1 serving Udon
1 Ebi Ten(shrimp tempura)
1 Tori Tsukune(chicken meatballs)
1 piece Kamaboko(fish cake)
1/2 Aburaage(fried tofu)
1 Shitake Fukumeni
3 pieces white leek
1 Onsen Tamago
50 ml (1.7 oz) Mentsuyu(triple strength)
350 ml (11.7 oz) water
1 tbsp mirin
some green onion
Tori Tsukune(for 4 servings)
100 g (3.3 oz) ground chicken
20 g (0.7 oz) minced white leek
small piece ginger
1/4 tsp salt
1/2 beaten egg
Ebi Ten(for 4 servings)
4 shrimp
some flour
10 g (0.3 oz) potato starch
1/2 beaten egg
100 ml (3.3 oz) cold water
50 g (1.7 oz) flour
Shitake Fukumeni(for 4 servings)
4 pieces dried shitake mushroom
100 ml (3.3 oz) soaking liquid from dried shiitake
1 tbsp soy sauce
1 tbsp sugar
1 tbsp sake

 3倍濃縮の麺つゆ:50㏄
 水:350㏄
 みりん:大さじ1
 青ネギ:適量
鶏つくね(4人分)
 鶏ももひき肉:100g
 ネギ微塵切り:20g
 生姜微塵切り:1片
 塩:小さじ1/4
 溶き玉子:1/2個分
海老天(4人分)
 海老:4尾
 薄力粉:適量
 卵液:1/2個分
 片栗粉:10g
 水:100㏄
 薄力粉:50g
椎茸含め煮(4人分)
 干し椎茸:4枚
 椎茸の戻し汁:100㏄
 醤油:大さじ1
 砂糖:大さじ1
 酒:大さじ1
