നാൻകട്ടായ് | Cochin Bakery Style Nankhatai | Butter Biscuit

These Nankhatais will melt in your mouth and leave your fingers coated with buttery white powder. It's so delicious! It's so easy to make it at home, so stop spending an absurd amount for a packet of cookies which is most probably made in dalda now and make these at home instead.
INGREDIENTS
All purpose flour - 1 cup
Salt - 1/3rd tsp just a pinch is needed
Powdered sugar - 1/2 cup minus 2 tsp
Ghee - 1/2 cup ( may need less than 1/2 cup)

Similar to how I made them in Lamu Island but we used same ingredients put we add cardamom and no salt and a dot on the top we call them Katai can be made different ways but this one looks yummy too I made them one time many years ago for a wedding my friends and I and one of our friends aunt she was our guide, they were so yummy so it’s been about 20 yrs or so I am looking at different ways to make them so I can do another attempt thx❤

I just searched katai from Lamu Island on Google and it looks soooo yummy ! I'm sure you'll like this recipe as well. You can add cardamom to flavour the cookie too.

Thanks for the post ma'am it's yummazing cuz that's how my grandma does ghee cookies, peanut cookies she uses peanut oil and white ghee balls, for ghee balls she will stir fry the flour. Medical student Malaysia God bless 😋👍

Meanwhile grease the plate/tin with a little ghee and place the nankhatai on it. Then drop the plate or tin carefully on the ring inside the cooker and cover it with the steel plate or glass lid. Bake for 15 minutes or until you see cracks. You can find plenty of videos on youtube that will show you how to make cakes and biscuits on stove top. I hope what I wrote helps.

Would taste good with Ghee. Biscuit will taste different if butter is used . But please do not use oil.

Now let the pot preheat well on medium flame for atleast 7 minutes. Meanwhile grease the plate/tin with a little ghee and place the nankhatai on it. Then drop the plate or tin carefully on the ring inside the cooker and cover it with the steel plate or glass lid. Bake for 15 minutes or until you see cracks. You can find plenty of videos on youtube that will show you how to make cakes and biscuits on stove top. I hope what I wrote helps.

I've always been using fan with grill option in my Oven for cakes and cookies. I could be wrong and should be using some other setting, but I'm absolutely clueless when it comes to oven. I used a microwave with convection setting for so long now that I do not know how to use an oven :D

If you have convection setting in microwave you can make it. For the longest time I used convection mode in microwave to bake. My mother still uses it to this day. On Stove -Heat up a curry pot or a big cooker. Place a ring inside the cooker and close the pot with a steel plate. Now let the pot preheat well on medium flame for atleast 7 minutes. Meanwhile grease the plate/tin with a little ghee and place the nankhatai on it. Then drop the plate or tin carefully on the ring inside the cooker and cover it with the steel plate or glass lid. Bake for 15 minutes or until you see cracks. You can find plenty of videos on youtube that will show you how to make cakes and biscuits on stove top. I hope what I wrote helps.

@@AL-INchn Preheat at either 140 or 160 degree. That depends on your convection. Mine and my mothers differs. If you've baked cakes before and know what temperature is enough, use that. Or go with 140. Sometimes 160 can be too high. Preheat and also cook at the same temperature. It should work out. But do not burn or brown the cookie. It should be white in color with a few cracks on top. Use the smaller stand to place the cookie.

Ghee taste better aayirkyum. If you have butter, just melt it over the stove for a while and you can make ghee quickly.
