We make vegetables like this in Nigeria and kids don't have the problem of "not wanting to eat their vegetables". I've always taught "well why would they want to eat it? It's bland" when I see videos online from other parts of the world where they just chunk random vegetables into a bowl.

I honestly think the reason why kids in the west tend to dislike vegetables is because they never season them right. It’s bland and soft, sometimes only flavored with salt or just eaten directly. I never understood why they were so hated until I tried them in school and realized how bad they tasted…at home the sauce always made it really good, and I loved the texture.

@@fayemyles4942 Arrowroot powder is a white, powdery starch that’s naturally gluten-free, grain-free, vegan and paleo-friendly. It is extracted from the root of a tropical plant known as Maranta arundinacea. When the root is harvested, it looks pretty similar to cassava root, or yucca, so it's oblong in shape. Its a good method. My criticism is that the veg could be cooked a bit softer, no the color isn't lost. It is possible to have tender veg with strong color.
