Mountain Man Breakfast

2 pounds pork sausage
1 dozen eggs
2 cups cheese
1 1/2 pounds hashbrowns
One can of whole green chilies
Splash of milk
Salt and pepper
Brown sausage remove and drain. Brown hashbrowns. layer green chilies, sausage, pour over eggs, and top off with cheese. Bake for 20 minutes at 350° or until eggs are done. Cook outside in Dutch oven over coals or in a 13 x 9 casserole dish or a similar casserole dish in an oven.

    Wow. I tried this inside my house. In hindsight, it’s probably best to use a normal indoor oven instead of building a fire on your kitchen floor. Maybe if you had tile it would work better🤷🏼‍♂️ the coals quickly ignited the floor and it was difficult to control. We lost a good part of our kitchen before my wife brought in the hose. We got it put out however and it was very delicious. Possibly even worth the fire damage. All in all I will play it safe from here on out by building the fire outside. Other than that I would definitely recommend! Thanks for the recipe! Keep em comin.

    I use hard lump charcoal and seasoned oak. Yes the chilies give it a unique flavor. Thanks!

    Dozens of ways to make it but since little of this was available in the Rocky Mountains in the fur trade era I searched for quite a while to figure out why it's called Mountain Man Breakfast. Any guesses?
