Good update

I think twice per week is good if you can, and if you have the material. It keeps your subs aware and engaged, but not having to be forced to choose what to watch given how easy to get more channels than there is time for.

Twice a week is a good upload pace if you have the content, and won't get burnt out down the road once you get through your backlog and have to start recording more on top of the editing. Sucks the audio quit on you that much on the GoPro with that adapter. I went with a DJI Action 4 cam. It uses a similar adapter to plug the panda into, but looks like it's way smaller than the GoPro one. Might be an option to check out if you're looking at anything else for your next camera ultimately. There's also a DJI wireless mic you can buy that pairs with the camera and also records to internal storage on the receiver as a backup. Of course that's more money, but again, options to look at for down the road.
