This is very interesting, it seems once this process has started they have to finish it. Molting generally occur on water, the previous week they are very voracious, then they will stop eating for a few days usually 4 to 7 days untill they molt, after that they won't eat (they can't) utill shell is hard enough 4 to 7 day as well. Very fascinating creatures!
