Modern Classic: East India Negroni

The East India Negroni was created by Jim Meehan in the fall of 2009. The idea behind this drink was to show the versatility of rum which usually stars in sweeter Cuban and Tiki cocktails. East India Solera Sherry is a combination of Pedro Ximenez and Oloroso Sherries which are aged in such a way as to mimic the same conditions the wine would have gone through during a transatlantic journeys in the 1600's. As far as this Negroni variation the Sherry stands in beautifully for Sweet Vermouth, imparting a complex yet lighter touch to the cocktail and pairing well with the Rum.
Since the Sherry is the star of the show here it's best not to try and sub it for anything else, bite the bullet and get the right kind (hopefuly you can where you live) If you are going to sub the rum, Meehan suggests subbing for something English style with a little barrel aging such as Appleton Reserve or Mount Gay Black label.

    Yo Leandro. Oh yea~ man Have a question/request. I've recently gotten into desert wines such as Ports and sherries and I was wondering if you could do a couple episodes on certain cocktails made with those drinks. So far, my favorite one to drink straight was Fonseca Porto Bin 27.

    it's kind hard find this East India Solera sherry here in Brazil....Can i use other type of wine? or use vermouth?

    Any more cocktails I can make with the East India solera sherry? Got a bottle.. was wondering if Negronis with gin would be good or any cocktails subbing out the vermouth for this sherry. Also I tried smith and cross here but it was a little too strong at 2 oz.. might look for the banks or suggested subs.

    I’m really excited to make this! Negroni is a favourite of mine! My career as a bartender has only just started, been at it for two years now and I’ve only recently jumped into mixology properly in the last year or so.     Another solid video man! You didn't say it here, but you've mentioned in several other videos how you raise the spoon to check the dilution level. I don't actually understand what you're looking at when you do that. Can you explain, or do a vid about that??

    It's not an exact science, but basically you make a mental note of the level of the liquid before you add ice, then after you've stirred a while, lift the ice up from the drink and see if the level is higher than when you started, the higher it gets, the more dilution.

    Usually when I lift ice it's to help in the dilution of sugar in drinks like an old fashioned. But I also look to see how much of the level of liquid has raised without the displacement of the ice. It's rather unscientific though, and a little questionable so I don't really do it very much if at all any more. In reality if Ice comes straight from the freezer it'll take a little while to chill the drink and when it does the drink will stop diluting due to the freezing temp of booze being lower than water so over dilution isn't too much of an issue. Smaller pieces of ice will dilute faster than larger when you're in the process of stirring.

    yes, you can also use a sharp peeler to clean up the sides of the peel, but if you want a specific shape you need a knife for sure!

    if it's older than a month (or maybe 2-3 if it's been refrigerated) you should probably only use it for cooking or throw it out. Since the Lustau India Solera sherry is a blend of PX and olorosso sherries, it could definitely work, but it will probably alter the flavor profile. I also use PX sherry for a float in a Fog Cutter, not sure if you're into that, just trying to help ;)

    Hey! I want you to feature a cocktail called "City Gyal". It was created by a bartender on instagram, @cocktailzjamaica. You can view the video there, to see his story. He was inspired by a young beautiful celebrity, he met in Kingston, Jamaica. The recipe is : 1oz Skyy Vodka 1/4 oz Campari 2oz Pineapple juice 2 Bs of Ginger Extract 1 1/2 oz of Sugar Syrup (Simple Syrup) Freshly Squeezed Lime juice. pour in to a chilled Coupe glass. Garnish with yellow Hibiscus or Yellow Elder flower. Wrapp glass with Red Ribbon and pin with Mini Clothes Pin. Shake all ingredients.

    A Negroni consists of only the following items only: gin, sweet vermouth and a bitter aperitivo (usually Campari). This entire channel consists of "variations". Almost every "Negroni" cocktail i see on here has other items added to it. This is nothing short of utter blasphemy. Let me start out by saying I have nothing against Negroni variations. Adding bourbon to your sweet vermouth and Campari? It's called a Boulevardier. Totally different. Want to add aquavit and some pretentious sherry with peach bitters? I don't know what the hell you'd call that but it's not a Negroni. I would be more than willing to wager I've drank more Negronis in my 42 years than any of you have in your entire lives. I have one almost every day and sometimes more than just one cocktail. Want to personalize your Negroni? Use a mix of different gins or use Punt e Mes or Dolin Rouge. I'm not a religious man nor am I anything close to a culinary expert. But as a bland, white, mid-western male I am honestly the most passionate person when it comes to Negronis and Americanos. All of you mixologists stay the hell away from our Negronis and stop calling your variations actual Negronis. Yet again, it is utter blasphemy and it rocks me to the core of my pale being. Shit, I stopped posting here for 3 years and made this account for the sole purpose of posting this. I've seen post after post of Negronis all over this channel (and others) and it's been driving me insane. You god damn heretics. Respect the Negroni and stop changing it into whatever you like and love it for it what it is. Or make your damn riff and call it for what it is. A variation.

    ...I live way up in one of those frozen, Canadian-type places, and I am quite familiar with who Jim Meehan is (and while I haven't been there, with PDT as well). I can't tell if this is just poor humor or trolling or whatever, but maybe approach him, and explain that you know what a boulevarier is, and that means he's not allowed to call a thing he carefully invented, whatever he wants to call it. If some famous chef throws boneless chicken wings on a pizza, and calls it a Spanish Pork Chop- if it is delicious, people love it, and they want to try their hand at bashing one themselves, nobody gives a turd that YOU really know how to eat a REAL pork chop. I don't have any sherry at home, so I'm going to go out and buy a bottle just to make this drink because I watched this video to learn how to make a drink I am not familiar with, instead of making an argument literally nobody here requires to be made.
