Great vid! I'm a new owner of a Moccamaster Select and this video provided me with pretty much everything I needed to know. I was pretty dialed in with my chemex & hario pourover but those solutions while great for just me weren't adequate when hosting so I finally bit the bullet and bought this machine that I've been eyeing for a while. I've only had it a few days but feel that it's making coffee on par with my pour over. Still have some playing to do with the coarseness of grinds and different weights. But even when I'm lazy and just use grinder presets it's making a solid cup of coffee. Stirring the bloom with a spoon definitely makes a difference.

Thank you James for your overview and your tips on the Moccamaster Select. It was excellent, as were your reviews on the prior Moccamasters. I do have non-Select Moccamaster models: KBG 741 and a KBT 741. I grind my coffee beans in a Baratza Virtuoso Plus Grinder. I have used both Baratza's recommended grind setting of 18 for the Moccamaster and your Baratza Encore recommended grind video settings. Regardless of the setting used, my coffee has always been excellent (by the way I do stir the bloom). Perhaps the reason I have no perception of any taste difference from the different grind settings is due to my own taste buds or the fact that I take my coffee with hot half and half. Nevertheless, I just wanted to let you know that I not only enjoy my Moccamasters and its coffee but I also enjoyed your informative videos. Keep up the good work.

I am getting this coffee maker tomorrow and can’t wait. I have been using a previous model with the insulated carafe and the 2nd cup was never hot enough. I have the Barista Encore and your recommendation of 28 for grind size for up to 750 ml of water was interesting to see. I will try that out definitely in the near future. I also need to start weighing the beans prior to grinding instead of weighing the grounds. I was also using the stirring method on my current model with better results. Thanks for the excellent video and the advice. I have taken a screenshot of the notes. Cheers from Georgia, USA.

EXCELLENT video!! I totally agree with everything you pointed out: spoon agitation, occasional dripping if blooming by replacing carafe, hot plate not really good for coffee, turn off machine immediately after brew cycle, etc. I tried some spoon stirring during bloom phase with carafe removed: produced great coffee but really challenging to replace carafe properly without some dripping; i now simply stir & still get great coffee. Also, be warned: if one fills the brew basket with too much water for blooming (with carafe removed), there will be some leaking onto hot plate. Must be that the brew basket is not designed to hold too much water & subsequent pressure. ..... Also, i typically dose about 20 grams of coffee for a cup no matter what brewer i use. With Moccamaster, I make 2 of my cups so as not need to brew twice: Water to 6 cup level on reservoir & 42g coffee. I drink half immediately & half i put into a thermal mug. This way i am successfully brewing for a single person using a batch brewing machine. Usually i drink 2nd cup 2-3 hours later & it tastes great - better than hotplate for sure. I add milk to my coffee & IF there's any concern about possibility of any decline in my 2nd coffee after sitting in thermal mug, it is completely offset by adding hot milk. So far, delicious every time! Thank you!!

Great video! Many people over look the access to the coffee grinds!!! Other drip makers may have a better shower head but you can't see your results!!! I was one of those folks when I purchased my MM that I refuse to assist those grinds, it defeats the purpose; not anymore I tried doing a double grind stir one at end of bloom and a 2nd with 4 cups of water to brew and perfection!!!! I would challenge pour over Any day!!!!. Great points on this video!!!

Excellent video! I have been using a Moccamaster for close to 10 years now and will never look back. My spouse and I like our coffee strong which means we put quite a lot of grinds into the basket. This often resulted with spillage of water over the basket during the brewing cycle (the drip is slower than the intake into the basket). I finally realized a simple solution...use #6 size filters! They stick out of the basket a little, but that's no problem and there is no longer a risk of overspill.

Thanks for watching, Rob, and great to hear from a long-time Moccamaster user. Out of interest, how much coffee are you using and how coarse/fine are you grinding? Rather than making use of a larger filter paper, you might be able to create the same results from using less coffee and a finer grind...

Hi Tafis, you could most definitely do this yourself by simply flicking the power switch off for 30 seconds or so before turning it back on again. It might be helpful if you're brewing very fresh coffee that needs more time to degas, but anything roasted more than a week ago should be fine to just stir during the process and not have to pause for a set bloom time.

Little bit confused, this model is advertised as 1.25L capacity, but your information leaves me thinking it only does 1L. With the water retention in the grounds brewing 1.25L should get you close to 1L finished coffee. Can you please clarify? Excellent presentation and detailed information! Cheers.

I have had this model of this coffee maker for over a month, and even using the closing of the drain by removing the carafe and stirring the grinds, I found the coffee came out inconsistently, even repeating the same procedures--one time itwould be great, another time not good. I ordered the CoffePilot spray head insert (it took about 16 days to get here from Canada), and it really makes the best coffee I've had from the machine, without needing to stir. Tecnnivorm really needs to redesign their spray head, but they are stubborn. I spoke to a representative of the US distributor about this and she said it received the whatever coffee association certification, and you don't need to do anything or stir or use different spray heads. I told her my experience, and that of numerous others, is that it often comes out not very good with no modification of the procedure , and is inconsistent even doing other things, except for this CoffeePilot filter basket insert spray diffuser. One problem I noticed, which I had noticed before, and I don't know if it is just my unit, but it looks like it affects other units from the appearance in videos, is that the filter basket bracket, or platform, angles slightly upwards of the end away from the water tank. This probably makes no practical difference in normal brewing, but when using the spray head insert because the basket, and therefore the insert is not level, the water is not distributed is evenly as it should be. I tried some spaces of multiple folded aluminum foil under the edge of insert near the water tank, and then instead I tried putting some rubber spacers under the feet of the machine under the water tank end to raise it about 1/16 inch, in order to level the basket, although that puts the base slightly out of level, which may not matter. Customer service thought it might need a replacement bracket, but I suspect they might all be that way, and she thought maybe 1/16 might be within spec (although I doubt it). I ended up solving the problem by making a shim by cutting a strip of aluminum foil the width of the end of the bracket where it attaches to the metal column, and folding it over numerous times to get strip about a quarter inch wide, and after loosening the screws of the bracket, inserting that strip above the screws, just under the level of the top edge, and tightening again. You can't tell it's there really (I put the dull side of the aluminum on the outside of the strip), and when fully tightened, the bracket became level.

From the standard thermal carafe version of the moccamaster which do you all prefer. Or is it a personal choice on how you use the machine and how much coffee you nornally brew. I orefer glass due to easy clean up and i seem to be sensitive to metal taste. But always feel like I should have thermal versions of the brewers. I suppose the half batch ow rate is another advantage between tbis new model and the standard thermal moccamster versions. Also not sure if thenew spray arm comes standard now but it seems like an improvement too.

Hi MA, it is definitely beneficial for these smaller batch sizes to use the slower flow, but it most certainly isn't necessary to upgrade to the Select model if you already have one, as you're able to get nice results by altering your technique for a regular flow rate with smaller batches. If you are interested in a glass pot version then you have a couple of reasons to upgrade, and it is really up to you, the glass pot is obviously much more fragile and prone to breakages, but much, much easier to keep clean between brewing batches. The coffee itself will prefer being kept in a thermal carafe than on a hot plate if you're looking to keep your coffee hot for a while.

What is a good starting point for grind settings on a Baratza Virtuoso + (M2 Burr) and Moccamaster Select for 30 gm/500 cc and 60 gm/1 liter. Going to be finer with 1/2 liter and coarser with the 1 liter for sure, but viewer recommendations have been all over the place, on various videos on this channel and that makes no sense to me. Using primarily medium roast fresh beans. Thanks!

I did some homework to figure out this"cup" thing by European measurements with the Moccamaster. Each cup is 120 ml. So 4 cup on the MM = 480 ml water. I use your ratio of 15g of coffee. So 480 divided by 15 = 42g coffee. This comes to around roughly 8g coffee per cup on MM water scale...... If you are using 36g per the 6 cup mark, that seems a bit weak to me. By my calculations, I use 48g coffee per 6 cup water on MM. I mean, to each their own taste. But my measurement would be consistent with other manual brewing ratios as well. I mean you said 15g/250 ml; I'm saying 15 per 240. Not far off. Also, i stir with a spoon. I had to get over my own resistance to "I shouldn't have to do that". It takes very little effort & it's good not to over agitate anyway. But it definitely is worth the time & effort

Great video! I've had a MM for 4 years now and finally splurged and purchased the Baratza Encore to finish off the set. My question is more about the grind size and agitation. I'm using a grind setting of 18 and stirring but noticed water pooling above the grinds. Is that good? It's never really happened that way before. The coffee tasted great but was concerned, is it just supposed to happen with quality grind size?

Hi Derek - thanks for watching. Based on our brew recipe, we'd recommend having the Baratza set at between 28 and 30 to begin with. Stay closer to 28 for batches below 750ml and 30 as you make bigger brews. Start there and us know how you get on.

Thank you for watching, Edoardo. We would generally brew a minimum 30g to 500g in the Moccamaster, forgoing automation for the making of single cup brews in favour of a V60 or something similar. Saying that, what you could do is remove the jug entirely and brew 15g in the basket, leaving it to steep for a couple of minutes once the 250ml of water has dripped in, and then give it a stir and swiftly lock the jug into place to drain through, brewing in a similar way to a Clever Dripper or other steep and release method.

I’m curious: With all the complaints about uneven extraction from the water wand, why wasn’t the Bonavita rated as the top brewer from the SCA? They both brew at the same temp. BTW, I just shimmy the brew basket back and forth, which gets all the freshly-roasted grounds wet. Most times I don’t need to do this, though.

Hi James, thank you very much for the video! Just wanted to ask regarding the grind size. I have a Moccamaster One Cup and a Baratza Encore Grinder. 1) The setting recommended by you for the Baratza Encore is 25 (36g of coffee and 600g water). Does this apply to the One Cup model also? 2) The setting of 25 is much more course than that suggested by Baratza (18 for automatic brewers) and it would be great to know your reasoning for the same

Thanks for watching! With the newer Select model, we've found that 28 on the Baratza Encore works well for smaller pots of up to 750ml. If you're brewing larger batches, i.e. more than 750ml, then we'd suggest moving the hopper to 32.

We must be remote twins. I always stir. I do not have Select but the model just before. Brew basket is cleaned with each use as is lid and carafe. Every 100 brews the machine gets a Durgol solution run thru twice. I parked the espresso Rocket and enjoy a clean fresh cup every day. Roast my own beans when types are available which is a problem of late. Use Gene Cafe roaster. Each type is individually roasted and blended after cooling. Five day rest and then brew with vacuum storage.

Thanks for the kind words. We don't have experience brewing with that particular model, but it would be helpful to know what brewer you're using in tandem with the cuisinart. For some methods things like drainage time during the draw down at the end of a pourover can help to troubleshoot if your current grind setting is too fine or coarse.

I noticed that you have the Encore baseline set for 28. They tend to recommend 18 for medium roast. I assume the Moccamaster requires much more coarse grinds? I'm switching to this new baseline and exploring around that range since I've been unhappy with the flavor of brews so far. Any input would be appreciated. :)

Hi Sam - thanks for watching and for your question. We're not sure what brewer they are recommending that grind size for, and you'll need to adjust grind size for the coffee itself as well as the brewer and amount you are preparing at any one time. We prefer using a coarser grind with the Moccamaster on the whole, but it is about achieving a balance of sweetness, acidity and bitterness in the cup, so you will need to try it on one setting, taste and then tweak as you move forward. Do email us on betterbrewing@workshopcoffee.com if you wish to discuss in more detail. Take care..

Maybe a silly question: Why does Moccamaster not just improve their shower head? I mean, would it be too difficult to increase the size of it so it covers all of the coffee grounds when one starts brewing? Stirring a bit at the beginning is not the end of the world but the machine would be even better if the step were unnecessary.

Apparently they got some sort of certification from the Specialty Coffee Association with this showerhead which is why they don't want to change it as they'll lose it I guess.. They have been aware of the issue since a long time I think.

I don’t understand the right switch on the front exactly, i put like 6 coups of coffee in the reservoir on the top left, but what does the right switch on the front mean? Is it like pouring more slowly, just so the coffee is mixed better if I put in on the left icon?

  • @workshopcoffee9001

    @workshopcoffee9001

    2 жыл бұрын

Hi Leon - thanks for watching. You're exactly right, the switch on the right allows you to change your water flow for smaller and larger batches. Leaving it switched to the left will mean the water comes out of the shower head more slowly, whilst flicking it to the right will increase the speed of flow and is recommended for faster batches. It's an extra level of control not offered by previous models that helps achieve a fuller extraction regardless of batch size.
