Milk Pie

Hi!
Here’s something I did during spring quarantine and it’s taken me until now to upload it. Partly due to procrastination and part indecisiveness.
Anyways this is how to make milk pie, a perfectly sweet and velvety dessert.
For Graham cracker crust:
1 1/4 cups graham cracker crumbs
1/4 cup sugar
pinch of salt
5 tablespoons unsalted butter, melted
Mix ingredients graham cracker crumbs, sugar, and salt together until combined. Add five tablespoons of unsalted butter, melted, and mix until combined. Press firmly onto the bottom and up the sides of a pie dish. Place in fridge to firm up. If baked crust is preferred, bake at 350ºF/180ºC for six to eight minutes until it’s lightly browned. Let cool completely before adding filling.
Milk Custard:
3 1/2 cups + 1/4 cup milk
1/3 cup all-purpose flour
1/3 cup cornstarch
pinch of salt
1/2 cup sugar
1 egg
1 teaspoon vanilla extract
8 tablespoons unsalted butter (*NOTE* butter can be reduced as you wish down to 1 tablespoon instead, consistency will change to be firmer)
Into a food processor add all-purpose flour, cornstarch, salt, sugar, half a cup of milk, egg, and vanilla extract. Blend ingredients until combined. Set aside.
In a large pot, over medium heat, add three cups of milk and eight tablespoons of unsalted butter. Bring to a boil, whisking often to ensure milk does not burn. Once at a boil, turn heat to low, slowly in a thin stream add flour mixture to the pot while whisking constantly. Very important to keep whisking until the mixture has thickened and is completely cooked. This should take fifteen minutes. It’s ready when the custard starts pulling away from the sides of the pot, also if you’re able to run a spoon through it and the line holds its shape. Finally add the quarter cup of milk and whisk to combine completely. Mixture should be thickened, smooth, and velvety.
Pour custard into the prepared crust. Smooth out the top. Let pie cool for 30 minutes then place into the refrigerator to firm up for at least one hour.
For Stranger Things themed version:
Recipe is same except switch vanilla extract for 1/2 teaspoon ground vanilla
Once the pie is completely cooled and firm for at least one hour, add fig spread to the top in a flower-like shape. Create five petals with a circle in the center. Pull back the spread in the center to make points in which the milk pie underneath can be seen. If desired, add slivered almonds around the edges of the petals and around the center to make it look more like a demogorgon.
Enjoy!
