MichelinPossible: I tried to re-create a dish from *3* Michelin Star Addison (spoiler: it was hard)
On today's home-cook culinary adventure, I try my best to re-create a single bite from my experience dining at a THREE Michelin Star restaurant in San Diego: Addison. We laugh, we cry. It took 9+. hours. But, was it a MichelinPossible or was it a Mission Impossible?

For the mandolin, I wear a cut resistant glove. It’s lightweight and afterwards I throw it in the laundry. Love the series! I look forward to them!
I second your grandma…..be so very careful with that mandolin! I’ve seen some nasty, horrible accidents. But LOVE the series! You go!

Hi Michel! You might want to press the potatoes for them to compress, every 2 layers add cream, butter, salt and rosemary in the cooking process for them to have a bit more flavor and leave them in the fridge to set overnight. For the jam. You need to cut the lemons in half, maybe even in four pieces with the rind, add sugar and let them sit in the fridge overnight. The next day, you just put them in the stove to cook for a couple of hours, strain it and put in on the jar, once it sets, you'll have jam. Lemons have a lot of pectin in them, so that is what is going to help it set. Hope this tips help!

Love these videos! These potato bites remind me of the French dish “potatoes pave” similar to what you did, but you press the potatoes overnight with weights after baking (like a heavy book or something)- this might be why the layers were less defined at Addisons!

I love that you took us along for the whole process and explained everything you were thinking about and why. When I create recipes I don't speak or even write them down and it's pure CHAOS so I appreciate how you make it feel like we're just hanging with you for the day. I know there's a lot that probably happens behind the scenes but you totally make it a whole vibe. Bet the bloopers would be funny! I'm so glad that you've had these great experiences. I tried to make reservations at a few Michelin star restaurants in France and was told a very firm "we cannot accommodate" from each when I told them my two allergies.

I absolutely loved this episode of this series! You did a great job, and all of us who have tried anything like this KNOW the struggle! I’ve tried cooking my way through The French Laundry cookbook and OMG it is so hard!
You should look up Poppy O'Toole's 15-hour potatoes - she trained at a Michelin restaurant I believe and has several iterations of a potato dish, similar to how you're trying to prepare it :) (just the potato, not the toppings)
