Mexican Radio: A Tequila Tropical Twist | Cocktail Fridays

This week we feature an original cocktail from Joe's Happy Hour that combines familiar tiki elements of a Mai Tai with unexpected ingredients like Aperol and Tequila. An incredible instant classic.
Mexican Radio by Joe Farrell
¾ oz (22 ml) Lime Juice
½ oz (15 ml) Aperol
¾ oz (22 ml) Orgeat
¾ oz (22 ml) Pineapple liqueur
2 oz (60 ml) Reposado Tequila
Shake with ice, serve over crushed ice in Brandy Snifter
Garnish with pineapple fronds

    I'm always looking for non-Rum tiki. I enjoy the Dead Man's Handle, but I don't have pineapple liqueur; so, I'm thinking about trying this with apricot liqueur. How bad could it be? And then I looked around the internet and quickly found the Mexican Radio, from way back in 2008, made with 2 oz Reposado Tequila, 1⁄2 oz Cynar, 1⁄2 oz Apricot liqueur, and 2 dashes Bittermen's Xocolatl Mole Bitters. Now, I have several drinks to try! Cheers!

Btw I would say if yer having a hard time finding the pineapple liqueur, since its a rare one, you could probably do 1/2 oz pineapple, 1/4 oz simple syrup to subsitute, should give a similar texture, and add a bit of pineapple nose on it. But yea! Hope you make it!

    @@CocktailFridays thanks for the tip Kevin. It makes sense, maybe bump up the rum to compensate for the liqueur also (also, more rum never hurts). I should get a bottle of that liqueur, the premium line from Giffards always gives a little extra

    "Yummy yummy i got love in my tummy and I feel like a loving you." This was an awesome drink...gonna have to check that site for some more of this...well done as usual. Don't you just love how all the offbeat artist from the 80's were so stiff in videos and performances, while the Glam rock guy were all over the place "Dr. feelgood" and "Kickstart My heart" all the while Duran Duran ruled over all. best thing out of the 80's The Cure of course!

    Nothin' more Irish than Tequila!!....... For sure though, this is one of those instant classics, courtesy of Joe Farrell.. absolutely killer combo in my opinion. Hope you enjoy!! The pineapple liqueur can be hard to come by, so you might have to make a bit of a substitution. You could always make it yourself with fresh pineapple infusion of something like gin and syrup.. or in a pinch could probably do pineapple juice & syrup.. just for the flavor profile. Cheers, Matt!

    Would it affect the drunk too much to replace pineapple liquor with just pineapple juice? Love the channel too.

    I've been meaning to try this substitution myself ,actually! My estimation is that I would probably do like 1/4 pineapple juice, 1/4 simple, and maybe 1/4 gin, just to try to make up the balance of syrup and booze in the liqueur portion of it. but, could probably do more like 1/2 pineapple and 1/4 simple. I'd have to toy with it, but thats definitely where I would start! Thanks again for watching!!

    @@CocktailFridays yes that makes sense thanks, as it seems a very specific choice for a liquor so rarely used rather than juice, it may be adding more texture and punch over straight pineapple.

    @@jimbodimbo981 I agree, I mean another thing you could do is, if you have pineapple rum (like plantation's rum), you could do like 1/4 oz of that, and then like, 1/2 oz syrup. I think the main takeaway from that liqueur is the syrup element, like you said, adding syrup texture and some sweetness, so a bit of pineapple and syrup would probably do the trick.

    Self-edit: I imply at some point that Pineapple is a citrus... it is, in fact, not a citrus. Pineapple and citrus fruits are super similar but it is not defined as a citrus. my bad! 😁
