    No one thinks we're 5 Star Chefs, Larry, and most people just want good food. So if a seasoned packet or a bottled marinade gets you there, so be it. All these hater comments that come from so called "Experts" that criticize about not growing all your own herbs and crushing every single ingredient by hand is just ridiculous. If these guys knew how to cook they wouldn't be watching our videos! LOL Keep up the good work brother man.

    The only difference between a seasoning package or creating your own blend comes down to having more control over how much salt you’re using. Most prepackaged seasonings are largely salt. If you have the spice rack or cabinet for it, experiment and develop blends that you enjoy the taste of; I can just about guarantee that you’ll use at least a third less salt than the packaged stuff and probably get something you like even better. All that said, if a package of seasoning is what you have and what you like, go for it! Personally, I love Old El Pass’s tack and enchilada seasonings.

    Damn Good! I used 4 pounds of chicken I got on sale from my local butcher and it cooked it to be like butter. I used a large yellow onion and 2 bell peppers from the farmers market. I also substituted the water with a 32oz container of chicken broth with an extra 1oz of rice and drained the kidney beans. I added 1.5 oz of homemade taco seasoning and the juice from half a lime, again from the farmers market. I baked it for the same instructions and done the cheese the same way. I did have to use a 10" x 14" metal pan since it wouldn't fit into a 9" x 13" casserole. At the end I let it rest for about 30 minutes which was hard to do since it smelled so damn good. But all together it came out to around $12 which isn't that much of an increase in price for a meal that would happily serve 10 people.

    Please allow me to suggest that substituting barley for half the rice will pump up the body of this dish a whole lot. I only buy things cheap, or on sale, and barley can be found for relatively cheap because it has a limited shelf life (has oils just like brown rice, and will spoil) and is a "sell it or throw it out" proposition for the retailer. Your channel is always time well spent!! Thanks!

    Looks good! I like the fact you use thigh meat. There should be more recipes out there with dark meat. It's cheap and has a lot of flavor and doesn't dry out as much as breast meat.

    After you debone the chicken thighs, take the bones, skin, gristle, etc, and put it in a pot. Add three - four cups of water, and simmer for 1-2 hours, Strain off the stock that is formed, and use it instead of the water that is added at 1:45 - you will be adding a lot of flavor, and great protein as well.

    Wow! On top of being on a budget, I volunteer at a youth camp one week every summer as chief cook and bottle washer. While you were making this dish I couldn't help but mentally build this three times over in a two inch hotel pan. I am going to try it at the monthly community potluck my Grange sponsors... probably in May. Thanks for the inspiration, Larry!!!

    +Bob Loblaw Thanks Bob! No you do not need to really precook anything before you add it to the slow cooker. I could have technically poured everything into the casserole dish raw and uncooked, covered with foil and baked it and it would have turned out basically the same. BUT that would have made for a boring and really short video! LOL Thanks again Bob! Larry

    I just made this with 4lbs chicken thighs, 1 green pepper, 1 large Vidalia onion, sauted in 2 tbs olive oil, 1 can diced tomatoes, 1 can green chilies (4 oz.) chopped, 1 can kidney beans w/liquid, 1 packet Taco seasoning, 5 cups water, 1 16 oz bag Goya medium grain rice, .653 lb. colby jack plus some cheddar. It came out more dry but delicious. That's dinner tonight and 9 lunches (frozen). Saving $$$s.

    In my local grocery there is a bulk foods section. I get most of my spices there. It is much less expensive as you only get how much you need. This also ensures that you have fresh spices and allows you to try new flavors. This is a great idea for the budget conscious cook.

    Well done, my friend! This is an excellent dish! I have 3/4 of a pint of my home canned salsa left, going to try this casserole but sub the tomatoes with chilies with my salsa. Keep this series going, love it!

    Rotel would be a great canned item to add to this recipe. It sounds wonderful!! Top it with some Sour Cream and fresh Cilantro and it would be really great if you like that sort of thing.

    I used pork chops in they because cheaper at my store. Pork chops was 1.69 lb chicken thighs 2.39 lb.

    I love seasoning packets in a pinch; I work 9 hours and a meal like this is awesome on a week night- great idea Larry.I would change 1 thing--I would drain the liquid so the chicken does not boil but cook

    I like boiling my thighs with salt, pepper, cumin and some onion, skin and bones on. When done take chicken and debone and remove the skin. I throw the bones and skin back in the broth and cook it down. Then I strain and use the broth for my rice, delicious!!

    +TheWolfePit So I did make this earlier this week. For my part it's a tie with your pasta casserole, for my kids it's a close second. Mainly just because they prefer pasta over rice in general. I think this dish would be great for company... the rice is really filling, you could feed an army! Thanks for all your hard work, we enjoy many of your recipes Larry!

    This kind of reminds me of something I make that's called salsa chicken. It's so cheap and such a lazy meal. I just throw a few pounds of chicken breast in the Crock-Pot with a little bit of broth let that cook until it's falling apart dump a jar of salsa in it and let it sit for a little bit cook a bag of rice and a can of black beans mix it all together with some butter and put the chicken on top. It's so good

    I make it in a dutch oven so no need to put in a baking pan. Also I put celantro in it and serve it with black olives and sour creme

    I love taco seasoning too..I buy the great big Shaker of it.. I use it in my chili instead of chili seasoning.. basically the same thing..

    i tried,i used yellow rice and regular cheese we have here in holland (since cheddar here is the definition of processed food) it was good i rate it 7.5 out of 10 for taste and verry easy impossible to mess up.

    Great Recipe Larry, I saved it to my recipe videos. I can slice this up into 4 serves and freeze it!! I haven't see any diced tomato's and chili here in Australia!! And we call a Chicken a chook!! lol Cheers

    Thanks Larry for another good budget recipe. I will try this with pinto beans instead of kidney beans. Black beans would be a good choice too. Idea: use pintos or black beans with jalapenos added!
