This Matcha Roll Cake uses simple ingredients but the sponge cake is light and fluffy. The combination of the matcha, azuki and whipped cream is so delicious.

40g Cake Flour (1.4 oz)
1 tbsp Matcha - Green Tea Powder
120ml Whipping Cream with 35% fat (4 fl oz)
1 tbsp Granulated Sugar for whipped cream
120g Anko - Sweet Bean Paste (4.2 oz)
80g Sweetened Azuki Beans (2.8 oz)
Powdered Sugar
Baking Sheet: 26x36cm/10¼x14¼ in

    if you don't like red bean that's fine but please don't be rude about it. it's commonly used in asian baking for buns, cakes, and other such sweets!

    Chef thinks a crunchy filling like crushed praline will fit the coffee roll cake. You can also add coffee syrup to the whipping cream, making coffee cream! :)

    I made this for Christmas this year. Unfortunately I messed up the first one and it was too thick to roll. It still tasted amazing so I served it anyway. People still demanded the rolled cake though so I made it again and split it into two pans. Both rolled perfectly. Then a guest showed up with cake. We had four cakes for five people for Christmas. Oh my God, so much cake. We finally finished it today...

    Chef thinks cocoa sponge cake goes great with the sweetened azuki beans :) You can also use chocolate chips as a filling or add chocolate sauce to the whipping cream.

    Thanks so much Chef! I just made this without the matcha and used a different filling, totally yummy and a keeper recipe! I just realized (after seeing other roll cake recipes) that this one doesn't have any oil, just the fat from eggs. Amazing!!

    Joanne Goh It's actually different.. BUT! If you have all purpose flour: 1. Get 1 cup of it 2. Remove two tablespoons from that cup 3. Replace it with cornstarch (to make it 1 cup again) 4. Sift the flour with the cornstarch not once, not twice, but THREE times. (just make sure its mixed in well) It's really cool because since I can never find cake flour in my stores, I made a whole jar of cake flour using this cool trick. It probably won't be exactly like cake flour but it helps.

    Turned out great! I can easily recommend this for less experienced cooks who want some variation. Also, once I substituted anko for fresh blueberries I picked in the forest which turned out to be great as well. It created a nice dark blue cream in contrast to the light green cake.

    I think the fact that this cake looks huge is that she is a small person. when I bake this, the cake was tiny lol. I should have use 8 eggs instead xD

    I love you!!! Such an interesting video, and the title "Cooking with Dog" is very well thought. I did try making this. I putted my oven at 170 like the video but then it was under cooked. Then I realized that my oven was Fahrenheit so I cooked again at 350. Despite this, it still turned out great. My rolling skill was not good, and a lot of cream spilled out. It didn't look as beautiful as yours. But it tasted so good. Thank you for the recipe. From Canada.

    The Kraft paper and bakery paper can be used in the oven but I'm not sure about greaseproof paper. Maybe you should read the instructions on the package :) Wax paper is not recommended since it will smoke.

    Bakery paper can be used but you can remove Kraft paper from the cake more easily :)

    this is my first cake by my own hands. and it works so well. thanks to Francis and the Lady. this recipe is awesome. the cake really moist and fluffy. (i didnt make the filling because of i dont like whipped cream, and i replace them with strawberry jam). I suggest to add 1 or 2 tbsp of Rum to the batter. it gives more flavor and smells so good.

    I made this with cocoa powder and strawberries. A good combination :D! This cake is extremely light and fluffy. I like it a lot better than western cakes. I made this for my project which turned out extremely well.

    Matcha green tea powder is also expensive in Japan. You can find cheap ones but generally they don't taste good.

    Thank you very much for the video and the recipe. I've made this 3 times now in Matcha, chocolate, and coffee flavor. They were so yummy. I use half plain flour and half self-rising flour for better spongy texture.

    i made this, it was very yummy! the sponge didn't break on me and rolled quite easily ^^ it didn't look as round as chef's and the filling didn't look as much as hers either even though i followed the recipe but it was so good!

    Kasutera (Castella) is dense moist sponge cake using honey and it is sweeter than Roll Cake (Swiss Roll). Chef is planning to make Kasutera in the future! :)
