MASON JAR Cornbread Mix | Holiday Prep & Gift Giving

Corn bread mix in a jar ready on my pantry shelves! this can be used to replace jiffy mix.
INGREDIENTS
1Cup Flour
1 tbsp - Flour
1 C - Cornmeal
4 tbsp - Sugar
2 tbsp - Baking Powder
1 tsp - Salt
INSTRUCTIONS
Whisk together flour, corn meal, sugar, baking powder and salt. Slowly whisk in 4Tbs vegetable oil. Mix until dry mixture is smooth with no lumps.
If a recipe uses a box of Jiffy Corn Muffin Mix: add the above mix to that recipe.
How to make corn muffins: Preheat oven to 400F. Combine above mix with 2 egg and 2/3 c. milk. Mix well. Fill muffin tins 2/3 full. Bake 15-20 minutes. (Makes 12 muffins.)
How to make corn bread: Preheat oven to 400F. Combine above mix with 2 egg and 2/3 c. milk. Mix well. Pour batter into greased 8-inch square pan. Bake 20 - 25 minutes

    Tip (that I just learned): fresh grind regular old popping corn - I use my coffee grinder; then add it to your cornbread mix instead of commercial ground. It makes the moistest, most flavorful sweet cornbread I've ever had. Yum!!

    Kerry, I learned that commercial corn flour is what is left after pressing out the oil. So when you do it yourself, you still have the flavor from the oil. Haven't tried it myself but I guess it makes all the difference in the world, right?

    You always come through for us ! Things that I would like to have on hand but never thought to make them ahead what a good idea!!!!!! I never seem to have cornmeal on hand but learnt that you can make it out of popcorn,so that’s what I do now ,I shall make that too I made your cake mix one same day you put it out I even baked one to try it ,and to tell my faults I forgot the salt and I think that is why it did not rise to much ,but I remembered to put them in the other jars and I only put in one cup of sugar ,but I sliced some apples with a little brown sugar and couple T.melted butter on the bottom then poured the cake mix on top Yummo !!!!Thank you very much still looking for that spice mix ,but this cornbread bred recipe is a bonus !!!!!!!!!!

    I make pancake mix in a jar, pint jar makes one batch of pancakes. I also do waffles in quarts.

    Amen. My family is from the south but I’m born and raised in CA, never put sugar in cornbread. My hubby is from the south and all he will eat is sweet cornbread. Ick! Therefore I never make either. Hahaha!

    Thank you for this! My mom told me today that all she wants for Christmas is a basket of some of my canned foods so I think I’ll include this with some salsa, salsa verde and cowboy candy! And maybe I’ll throw in a can of diced tomatoes for chili to go with her cornbread 😊

    Made the mix, found the corn casserole recipe, and made it for dinner. I added home-canned chicken and cheese to the casserole and made it a complete "meal" in one dish. Added salad and biscuits, and it was awesome. Thanks for the "mix in a jar" recipes.

    I’m doing this one for sure. I got THE virus right after Christmas. Sense then my brain just stops work from time to time. Last Sunday I had all my kids and GKs over for chill and I was out of jiffy. No big deal, I’ll just make it from scratch, right? Nope, my brain shut off. I couldn’t even figure out how google a recipe. I finally called my mother in law for her recipe. I think she figured out I was about to have a melt down over corn bread 🙄 and she just made it for me.

    I love the cornbread casserole with jiffy! I usually bring it for Thanksgiving. My husband loves jiffy cornbread but after getting cast iron cookware and making cornbread from scratch with actual cornmeal, that’s my favorite! I don’t think my husband likes it because more grainy in texture. I’m thinking about grinding it down finer next time and see if he likes it better and then doing what you did here. I had gotten a good deal on some cornmeal and would like to put some of these together

    Guess us Aussies are missing out. We dont eat cornbread nor can we buy it. Definetely something to try out. Our flour is processed so high that it might be good to invest in a mill. Then i can mill wheat and corn.

    For pie crust it's more helpful for me to get some made up, rollout, roll-up and stick in freezer for ready made pie crust.

    Love this! Quick question @That1870'sHomestead. If you use powdered milk and eggs in the cornbread mix, could you then just add the equivalent amount of water needed to reconstitute milk and eggs so it would be like a "just add water" dry cornbread mix?

    I think you added the correction for the oil in the wrong place - looks like it is in the directions for making the mix instead of making the end muffins or bread. Such a good idea and I will be doing this. Thanks.

    No it goes with the dry ingredients for basic jiffy mix, then follow remaining instructions based on what you are making

    If you are using at for long-term storage how would you store it.     In the video you mentioned the ingredients/amounts you put in the quart jar were equal to 2 Jiffy boxes. So are the recipes for the corn muffins and corn bread for 1/2 of the jar? Or the full jar? Just need clarification please

    Made this and 2T Baking powder was too much. The cornbread tasted like baking soda. I'm going to try again with only 2t of baking soda.

    This does not say how much oil to add. Do you put oil with the muffins and the bread too? It just says to add the mix with egg and milk. I'm sorry but I'm confused.

    I think I will cut it in half and put it in pint jars. I only ever use one box of Jiffy mix at a time.
