Martha Stewart Teaches You How to Pan Sear | Martha's School S1E13 "Pan Searing"

Тәжірибелік нұсқаулар және стиль

In this episode, Martha demonstrates how to pan-sear, a technique that produces consistently satisfying - and quick - meats and fish. Pan searing involves browning food quickly over high heat so it develops a nice crust and locks in the flavor and juiciness. Martha shares her technique for pan-seared scallops with lemon-caper sauce. She also offers recipes for crisp-skinned salmon filet, pan-seared steak with mustard cream sauce, and Muscovy duck breasts with a port-wine reduction.

I appreciate how Martha explains why you cook a dish the way it should be done. She reduces the amount of fussiness one feels they should do in order to make a stunning meal. Thank you again for this great tutorial.

So enjoy watching and listening to you Martha. Our beloved mother is in heaven now… but my brothers & I cannot help noticing how uncanny it is that you have a gentle warmth and kindness.. and even physical facial likeness to our mother. As you instruct, there’s a special graciousness that reminds us of our beautiful mother. I don’t know why today…after all these years, I felt a desire to share these things with you. But… Martha, there it is💜.

Oh, thank you so much. I really appreciate the duck breast tutorial. I want to raise ducks for meat, and I needed to really connect with a duck breast I know I will enjoy. This is it. Yeah! Moscovy duck breast is very different from all other duck breast meat, though. It's much more dark and rather similar to beef, or so I've heard.

Martha is one of the few cooking teachers who are interested in education.....teaching people serious about cooking. It's not quick and easy cooking "who has the time?" from the likes of Rachel Ray and even worse....Sandra Lee... ...and she could care less about entertaining her audiences with sensationalist yelling and screaming (hmmmm who could that be...). She certainly has her own style that is her's alone.....do it the right way for the best possible results. Love her. Ironic that the junk adds are for a processed meal delivery service for people too lazy to cook.

Something I did was cooking steak like this, Put other cast iron on top the steak, a Dutch oven. Just put heavy weight on it, which changes the texture and appearance. Is it good, I thought so. It's up to the person. But 7-bone, get the skillet as hot as possible, salt the bottom like salting the steak.
