In this episode, Martha offers a primer on this favorite starch. She begins with Scalloped Potatoes, also known as Potatoes Gratin: thinly sliced potatoes cooked in milk and baked in a cream mixture with cheese. Next comes a recipe that’s become synonymous with American food: Potato Salad. Then, in case your go-to mashed potato recipe needs an upgrade, Martha shows a few tricks to achieve the perfect Puréed Potatoes. Finally she shows how, in just a few easy steps, anyone can make Smashed Potatoes - crispy on the outside, creamy on the inside.

    I’ve never thought of cooking potatoes with a steamer basket or using mesh strainer to purée. Great lesson today for even experienced home cooks.

    I watched Julia as a boy making mashed potatoes, she would get so excited , I use the old fashioned masher , with butter, milk , roasted garlic, sour cream and chives , you are very inspirational Martha im heading to Aldi right now to buy more potatoes, it's only a 2 min walk, loved your tag sale show also , that was alot of stuff and it looked very successful and to a great cause, you are an American institution loved the world over

    Ciocia Kasia really knows how to make a good potato salad! Depends on the region of Poland you come from some ingredients varies. In general this is the base of potato salad.

    On my honeymoon we stayed in the best hotel and I had cold potato salad at lunch a couple of times. It was delicious. It was winter but who cares when you are young.

    Ooh, the Puree technique would work to make Greek Taramasalata because when I puree the potatoes in the food processor they get gluey just like Martha said. Hmm. 🤔

    I like some hardboiled egg pieces IN my potato salad .... I also usually add a little dill pickle juice and some more spices ... celery salt is great and finely chopped onions for delicious, fresh crunch. And for "puree" or mashed potatoes, I have a ricer that takes all the lumps out quickly ... much faster.

    I usually cook with the russet or golden potato and have had the red potato in restaurants but the blue variety is new to me. Does it taste different? If I made mashed potatoes out of the blue, would it really be a consistent blue color? That could be fun for the kids.

    I like mashed potatoes with some lumps. Most mashed potatoes I see these days are like baby food. I'm glad you called it pureed potatoes and not mashed potatoes.

    Agreed. A little texture is fine as long as it is soft. The overly smooth potatoes does look like baby food.

    I’m sure those puréed potatoes are amazing, but I’m also sure I’m never going to make them. Nobody will know the difference if I just mash and put some butter and cream in.
