Marjorie's Candies BUTTERSCOTCH Hard Candies

Butterscotch Hard Candy
2 cups sugar
1/4 cup corn syrup
1/2 cup butter (1 stick)
2 TBs. water
2 TBs. vinegar
1. Combine all ingredients in 2-qt. heavy bottomed sauce pan. Cook, stirring until all the sugar is dissolved.
2. Introduce the candy thermometer and cook to 300 degrees F. Stirring occasionally.
3 Remove the pot from the heat, and allow it to cool a few min. It becomes thicker and stands up better for a lollipop.

4. If you do not have a mold for making small pieces of candy. Just pour the thickened butterscotch on greased wax paper in a 8 x 8 inch pan and use a buttered knife or flat side of a metal spatual or a dock scrapper would work great if you have one. to mark while the candy is still soft .
5, Allow candy to cool completely and then break apart and store in an air tighr container.

UK recipe = 110g butter. Golden syrup instead of corn syrup. I use turbinado sugar and also a teaspoon of vanilla extract. For vinegar I use one tbsp of Chinese vinegar. Smash some up and sprinkle over Cornish clotted cream ice cream. Lush.

I've never used a thermometer at all when making hard candy.. or toffee as we call it where i live..watching and smelling it does the trick..For me anyways.. :) thx for the tutorial.. love butterscotch and im going to be making these for sure

This looks good,, thanks for sharing and God bless you and your family. I'm going to try this and try cinnamon too. I have a set of digital thermometers I use for smoking and it has a clip to keep it from touching bottom of pan. Hopefully it will work.

I made some candies right now and it worked! I used only 50 g butter, 4-5 TBs of sugar and 2-3 TBs of water!

Hi Margie, Thank you for your recipie. Two questions: 1. What does adding corn syrup do to the recipie? I thought corn syrup is just sugar so why not add more sugar. 2. Does this end up very hard, like store-bought butterscotch? I bought some toffee with a butterscotch topping, and it was softer than the toffee itself. That is what I am trying to make.

Margie's It's No Secret Candies what I am saying is actual butterscotch is made from BROWN SUGAR which gives a richer deeper flavor than confectionary sugar can do. Caramel and butterscotch are seen as two different sweets
Vinegar helps to stop the sugar crystalizing. MCC;)
i thought you were supposed to use brown sugar?

I've just made the candy, I used only 100gm. sugar but I follow everything else. The results is that taste is delicious but it is very oily and sticky !Maybe you know what went wrong ?TQ.

Grossed me out when u used ur hand to spread the butter an then u didnt show the finished product which was very disappointing!
