Pimentos de escabeche
How to make easy and delicious homemade roasted red peppers marinated Portuguese style in olive oil and vinegar.
6 Red peppers ( you can do this with as many as you like)
bake in the oven at 180º till the skin is all blistered.
After its out the oven let it cool down before you remove all the skin of the pepper.
cut it into chunks add to a bowl, season it with olive oil, white wine vinegar and salt to taste
