    Heat that iron skillet with oil to super hot and then pour in the batter and you will get a crispy brown bottom. Mississippi style!! Love the show!!!

    I grew up on the west coast, son to southern parents. Cornbread was a staple in our house... as we stewed beans and ham, fried potatoes, steamed cabbage and other various greens with bacon. I lived in Memphis for about 5 years and grew to love it. The food and wonderful Southern Hospitality is a real thing. P.S. There is no substitute for real Maple syrup and heat that skillet before you grease it and/or before you pour your batter to get a nice golden crust.

    Here's where I have a pretend hissy fit... When the title contained the words "maple" and "bacon", I said to myself, "How awesome! Sam and his crew are making a subtle, yet awesomely delicious acknowledgment of Canada Day for all their Canuck fans!"     This needs a decent amount of diced jalapeno to offset the sweetness of the maple syrup, and a lot of smoked sharp cheddar for an extra layer of flavor.

    Finished watching the video and have to tell you that your batter was too thin and the cornbread did not finish cooking. It’s why it was so wet and compact in the middle. I enjoy your videos and really hate to criticize but that’s the worst cornbread recipe I’ve ever seen. Try this one... One cup each of all purpose corn meal and flour. 2 teaspoons of baking powder and 1/2 teaspoons of baking soda and 1 teaspoon of kosher salt. Your wet ingredients are butter milk, two eggs, and 2 tablespoons of melted butter. Now for the bike fry 6 strips of bacon in your cast-iron skillet and put it in a 400° oven. ( don’t remove bacon or grease) Mix your dry ingredients and wet ingredients separately then combine the two. You want the consistency to be like very thick cake batter, it should slowly fall of a spoon when finished. You can a bit more buttermilk if needed but don’t over stir. Pour the mixture over the bacon and grease and bake for 25 minutes or golden brown. Let cool on a rack for five minutes then turn on to a plate. The bacon will be visible on the bottom and the edges will be crunchy and might damn fine! It’s ready to slice and serve. You’ll want to slap the dog nasty out of bright boy!

    Pancake syrup? Have you lost your mind? Canada is calling, they want their passport back! You are using REAL Bacon, why not REAL Maple syrup? You, of ALL people should know the difference! steve
