Mango Cream Cake
This recipe is close to my heart because this is the first frosted cake that I sold when I was just starting to bake. My original recipe used butter icing which I later changed into whipped cream icing which is lighter and easier to make. The secret to a good mango cake are sweet, ripe and plump mangoes. This cake is delicious and not so difficult to make if you can do a chiffon cake. Best served well chilled. I hope you will enjoy this Filipino classic cake!

This cake , on equal level with Sans Rival (and Silvanas ) is my absolute favorite , hands down. As a Pilipino pastry chef, you are at par with the famed French and Germans. But your creativity is ahead. Those touristy french patisserie through the window are feasts for the eyes if you have the Euros to spare , the taste are worth it ?

I did not do a tutorial for sponge cake with whole eggs because it is more difficult for beginners. Based on my experience in teaching, it has a higher percentage/rate of failure for beginners. I want to show recipes which are easier to make. I might teach that in hands-on or face to face classes only where I can supervise the students. Thank you for watching!

This cake has to be refrigerated. Icing will stay fresh for 3 days after that it will start to crack but still good to eat.

3 - 4 days inside the refrigerator but put a glaze on the mangoes so they do not discolor.

I used a non-dairy whipping cream Bunge Professional. You can buy it in the bakery supply store in your area.

Sure you can! Whipping cream makes a nicer icing because it gives a bigger volume and great consistency but it is not as tasty as all purpose cream. I love whipping cream for frosting!

Neutral geli or a glaze so fruits will not discolor. You can use a gelatin glaze instead. Dissolve 1 tsp. gelatin in 1/3 cup hot water. Use this to brush the fruits.

Yes but not sobra stiff. Thick is a better word to describe it. If you over beat cream, the texture is not smooth and it is full of air holes.

You can use 1 1/2 cups to 2 cups whipping cream depending on the type of cream. Some whipping cream do not whip up so much.

The flavor of the fresh mango alone is not enough to give depth to the cake. Artificial flavors are added to improve or enhance the taste or smell of a particular food item. It changes the perceptual impression of food as determined primarily by the chemoreceptors of the gustatory and olfactory systems. They add stability and consistency to the products. You can always omit the artificial flavors if you wish to.
