Caramel Cake
Caramel Cakes started to become very popular the last 10 years. Like any recipe, different bakers have different versions. My version has salt added to make it Salted Caramel. For me, the salt balances the sweetness of the caramel. You can however skip the salt if you do not want it in your caramel.
Some people get confused with caramel and yema. Caramel is made with a mixture of sugar which is caramelized to give that golden, caramel flavor and color and other ingredients like milk, sugar, eggs. While Yema is made with egg yolks and condensed milk. Watch out for my version of the Yema Cake in the next few weeks.

I forgot to mention to bake at 330F for about 30 minutes.

No ma’am. Cream of tartar and salt do not have the same function. You can substitute cream of tartar with vinegar or lemon juice.

I love caramel cake and I'm always looking for great versions. Your instructions and videos are clear, which is really nice. Looks good, but I don't understand why you put such a tiny amount of frosting between those two thick cake layers. Seems like the frosting to cake ratio would be off. But I guess if I made it, I could always put more if I want. Is it because this type of frosting would cause the layers to slide?

The reason I put little frosting in between the layers is because my frosting was still very warm and the layers would slide if I put too much frosting in between the layers. Whatever was not in between the layers are all over the cake. You can of course always put more frosting. Thanks for watching.
Hi Chef! Thank you for the recipe. I like that you make it easy for us to follow your techniques. I’ll try this cake next time naay occasion… I noticed at the end of the video it said all-purpose flour. Is that a typo? Also, Chef, do you have any tips on how to keep cakes in the fridge so that they last longer?

Thank you for bringing to our attention the error in the recipe. Our admin staff will pin a correction shortly. To keep cakes in the ref longer, I suggest that you put the cake in a closed container. If you have cut up the cake, make sure that you wrap them in plastic.

I used gel or paste colors for coloring but liquid color is okay to use too.

I caramelized the sugar until it got to that color. Some prefer a lighter caramel color but I prefer a darker one (basta hindi sunog) for contrast.
Hi chef why is that milk mixture when i pour it ..its curdling.

It means that you prematurely cooked the eggs. Add only a portion of the hot caramel-milk mixture to the egg mixture and then whisk well. Return to pan and continue to cook until mixture thickens. Please watch the video again and follow the instructions there. Thank you for watching!
