Making the most FINGER-LICKING GOOD Crab Curry - so good we'll fight the Colonel for the branding!
Cooking crab curry is an art form. Eating it is it's own art form as well. This method of cooking crab was taught to me many years ago by my mother-in-law. I am sharing it with my KZread community with a few modern updates! You will wish you could smell this through your TV/mobile device as it was cooking!
Ingredients
2kg crab - 1.1kg after cleaning
For the Marinate
~ 2 thumbs of whole ginger
10 cloves garlic
1 tsp salt
2 tbs coconut oil
1 tbs soy sauce
A handful of dhania (coriander) - Apologies for the incorrect spelling in the video
Large Splash of lemon juice ~ 2tbs
For the braise
1 large onion, grated
A large handful of curry leaves
4 green chillies - to taste
1/2 cup oil
1 curry spoon mixed masala - equivalent to 4tbs
1 tsp hurdee (tumeric) powder
2 bay leaves
1 tsp mustard seeds
1 tsp sesame seeds
1/2 tsp methi (fenugreek) seeds
1 tsp jeera (cumin)
1 tsp dhania (coriander) seeds
1 tsp black pepper corns
4 large tomatoes, grated
1/2 cup tomato puree
1 tsp salt
1 tsp mixed herbs
2 tbs imlee (tamarind)
1 cup coconut milk
1 tsp dhania (coriander) powder
1 tsp Jeera (cumin) powder
Spring onion and Dhania to garnish
We served with some fresh French loaf to soak up the gravy. If you are like Pranesh, you will need an antihistamine because the curry is irresistible!

My parents used to keep a nutcracker set at the table and a small hammer as part of our crab curry tools. I'm now 75 and this curry looks divine.

How many are you cooking for? If you watch my videos you will see that I generally use 4 or 5 pots and pans over and over again - if you get the right ones from the start then you stick with them and they last you a very long time. And you don't have to go out and get them all at once - I have accumulated over the years and certainly have my favourites over time...

@@KyLoG7 yes let me get my son to put something together! I would start with the following: Good quality: Non stick frying pan. Small and large casserole pots for your curries and stews Pasta/rice pot Set of oven friendly trays/Pyrex for roasts and bakes. Will add as I think of more

I have never eaten crab, except as part of a seafood salad (Crab sticks). Here in South Africa we prefer Crayfish, especially Cape Townians. Do you know if this will work on Crayfish? I love the normal Malay crayfish curry.

I’m up in Joburg 😬 Wish we could get some kreef! We haven’t tried with crayfish but it could work. You may want to cut back in the spiciness because crayfish meat is a more delicate flavor than crab so could be a little bit of trial and error to start with. Your local fishmonger should also have orange or pink crabs in their shells. I can ask around and see if I can find a supplier for you

Im binge watching Indian cooking channels now. Word of caution Aunty! If you get a splash of ginger in your eyes from the mortar and pestle, which I don't wish on you. Let me know please. I hold my mortar on my chest, and a piece of ginger got in my eye. The worst pain I've ever experienced! I've had chillies get in, but nothing of pain and burning of ginger.

Can serve crab currtt with rics or rori? When buying crab is it better to buy i crab with legs or how do ask your fishmonger to prepare it for you. I see alot of people only cook the body not legs

Our fishmonger sells the crabs whole and then cleans them up for us into the bodies and the legs. The bodies are generally more meaty but the legs can also yield some good crab meat and we like to sit and chew them... Rice or roti goes well with crab. To soak up the gravy.

I thought you said you used "SOY" sauce, you also used salt -- Why? Soy sauce is really salty.

The soy sauce has salt and we adjust the seasoning to our taste with the additional salt. Different soy sauce brands can be more or less salty and the best is to taste and then add salt if required.
