Saint Marcellin is a french lactic coagulated cheese that tastes much like a goat's cheese. At its peak ripeness, the interior turns to a fondue consistency making it the perfect dip for bread crackers and so on. The process of making this cheese is significantly easier than some of the previous cheeses we've made. However, it does take much more time.

This looks awesome
Would have appreciated more detail. I have had two trial-and-error attempts at this cheese and this is a beautiful video but the problem is you just do not provide enough detail in each step on how things should be progressing. By the way, it is pronounced "geo-tricky-um" not "geo-tri-chee-um".
