Making Gluten-Free Merry Brownies with Siobhan Muir

Brownies are one of those desserts that you can make for any holiday or event, or even just because. This recipe came out around Yule, but again, you can make them anytime and enjoy them. They do stay moist a long time, too.
INGREDIENTS
1 cup (2 sticks) butter
3/4 cup (12 Tbsp) cocoa powder
1 cup firmly packed brown sugar
2 tsp vanilla
2-4 eggs (we used 3)
1 1/2 cups all purpose flour (we used Bob's Red Mill GF 1:1 baking flour)
Powdered sugar to sift on top
DIRECTIONS
Preheat oven to 325 F (163 C) and grease a 9x13 inch pan.
Melt butter in a small pan over low heat, then sift in cocoa powder (we used a strainer) and whisk until smooth. Pour into a large mixing bowl and let cool.
Add sugar and vanilla, and mix well. Lightly whisk the eggs, then add to the butter-sugar mixture and stir to blend.
Add flour and stir until combined. Brownies should be stirred by hand until just blended. Spoon into baking pan and spread batter.
Bake for 30-40 minutes until the middle springs back when lightly pressed and the edges start to pull away from the sides of the pan. Let cool then sift powdered sugar over the top. Cut into squares or use a cookie cutter for festive shapes.
Store in a covered container. Makes 16 - 24 squares.

    My dad used to uncover the cakes and brownies my mom or I would bake, so they'd get hard. Give me moist! Watching you and your daughter making is making my mouth water.

    Yeah, I prefer them soft. The harder edges dig into my mouth so not fun to eat. Bring on the moist!
