Making Flavorful Beef Kaldereta
1kg beef, cut into cubes
beef bones (optional)
1 medium onion (minced)
4 cloves garlic (minced)
2 tsp ground black pepper
2 tsp salt
1 tbsp fish sauce
2 bay leaves
250g tomato sauce
3 tbsp tomato paste
1 can liver spread
1 tbsp chili pepper flakes (or 2-3 pieces fresh chilies)
red and green bell peppers
carrots (cut into cubes)
potatoes (cut into cubes)
1 cup shredded cheese
1. If using beef bones, boil in about 1 liter water for at least 1 hour. The longer the better to get the most flavor. Remove the scum that forms and keep the broth clear.
2. In a large and deep pan, bring about 2tbsp oil to high heat, then stir-fry the potatoes, carrots, and bell pepper for about 5 minutes.
3. In the same pan, add about 2 tbsp oil, then sauté the onions and garlic until fragrant, about 2 minutes. Add the beef, then stir-fry until it starts to brown.
4. Add salt, ground black pepper, and fish sauce. Continue to mix and stir. Add the bay leaves and the beef broth from the bones (or 1 liter water and 1 beef cube). You may put the bones in if there is space. Allow to boil about 10 minutes.
5. Add the tomato sauce, tomato paste, chili peppers, and liver spread. Mash the liver spread so it mixes well into the sauce. Allow to simmer for about 45 minutes, or more until the desired tenderness of the beef.
6. Add the cheese then mix well. Then add the potatoes, carrots, and bell peppers, mix well, then simmer for another 15 minutes or until the vegetables are tender.
