Making Colored Deviled Eggs with Siobhan Muir

Deviled Eggs are a favorite side dish for parties and celebrations, but we've added a twist. In 2020 we saw this technique on Facebook around Ostara/Easter when talking about coloring eggs, and we decided to try it. After doing it once, the Muirlettes declared this was the only way they wanted to dye eggs. Here's what you need:
INGREDIENTS for basic recipe
6 eggs
2 tsp baking soda (for the water)
1/4 cup mayonnaise
1 tsp white vinegar
1 tsp mustard (we used Dijon)
1/8 tsp salt
Fresh ground black pepper to taste
Garlic powder to taste (we used 1/4 tsp)
Hungarian Paprika for garnish
Water
1-6 Tbsp white vinegar
Food coloring
DIRECTIONS
Hard boil the eggs - bring a pot of water to a boil and add the baking soda. Carefully add the eggs by gently placing them in the boiling water. Boil for 12-14 minutes. Drain the boiling water, fill the pot with cold water, and set aside to cool.
When cool, crack the eggs and peel. Cut the eggs in half lengthwise and separate yolks from the whites. Place the whites in a bowl and set aside. Place the yolks in a medium bowl and set aside.
Fill three to six glass or plastic cups 3/4 full with cold water. Add a Tbsp of white vinegar to each cup and mix well. Add food coloring (4-6 drops) into each glass and stir to distribute. Add the egg whites evenly between the glasses of colored water. Set aside for 10 to 15 minutes to absorb the color.
**Note: the vinegar will not change the flavor of the egg whites.
Mash the yolks with a fork until crumbly. Add the mayonnaise and mustard, based on the number of eggs (1/4 for 6 eggs, 1/2 cup for 12 etc.) BUT only add 1 tsp of white vinegar no matter the amount of eggs. Any more than that and the mixture will be too sour. Add pepper and garlic to taste. Mix well into a semi-smooth paste.
**Note: you can fill a pastry bag with the paste and pipe it into the eggs to be fancy, but a spoon will work just fine.
Drain the egg whites using a strainer, rinse with water, and let dry. Set the colored whites on a plate, well side up. Fill the wells with the yolk paste until all the colored whites are filled. Sprinkle with paprika as garnish and serve.

    yeah, it's the only way Muirlette #1 will eat eggs.

    The reason hard boiled eggs are hard to peal is because they are fresh !!! The older the egg the bigger the air pocket which is why they would be easier to peel !!!
