Most of us know maple syrup as something North Americans put on their pancakes. Turns out, there are many other ways to use maple syrup and it’s actually good for you! You hear of “empty calories” and how refined white sugar has little to offer nutritionally, but maple syrup is high in certain minerals such as manganese and riboflavin. In fact, according to the Canadian Nutrient File from Health Canada and the USDA Nutrient Database, maple syrup has 95% of your recommended daily value of manganese and small amounts of calcium, potassium, and zinc. Besides calories, what does corn syrup offer you? Nothing! Maple syrup is even healthier than honey.
Maple syrup can be transformed into maple butter and maple candy by using machines to change its crystal structure. It can be transformed into maple sugar by further dehydration. In this video, you will see a continuous shot of this transformation which really looks like magic because it’s so fast and dramatic.
Maple candy is best when eaten fresh so that it is still soft on the inside. Maple butter can be used on your toast, banana bread, icing on cakes, and any other spreadable ideas you may have. Maple sugar can be used as a substitute for any other sugar and goes great in tea and coffee with its unique maple flavour.

My mom used to have to heat the bottle if real Vermont Maple Syrup, in a pan of hot water, to turn it back into syrup, for my dad's pancakes....lol. It would crystallize, so easily in cool, dry places.

That's how they made sugar in the "olden days"! It is described in the book "Little House in the Big Woods" by Laura Ingalls Wilder. Always fascinated me reading about that and visualizing what was happening.
Watching the sugar crystals form was seriously so cool and it happened so quickly

I feel that, My great uncle runs his own sugar shack just for himself and to give away to people. He would make maple candies while making the syrup by boiling it and dumping the hot maple syrup in the snow. The candies were like taffy, so good.
They look so delicious, & maple sugar on vanilla ice cream would be wonderful.

The device is Creaming machine - used in traditional confectioners all over the world. I made this candy with my grandmother using precious maple sent by Canadian relatives. Made specifically for holidays and celebrations... cornflour moulds.

It can be turned into pretty much anything. It can be soft candy , hard candy , ice cream like ( if we wanted it to be ) .
In my country, maple syrup is widely available just since a few years. I've never heard of maple sugar or butter :o it looks amazing!

First time i've actually seen sugar made in that particular way, seems like something that could be made at home to get a more natural sugar, without additives and bleaching agents.

Amazing setup you guys have, very professional. I'm in Northern Ontario. We've had the perfect weather for syrup so far. I was tapping my trees in February. That's crazy!!

Darn, I want some of those maple candy leaves now. I used to be able to find some maple creme cookies locally, those where delicious! 2 maple flavored maple leaf shaped cookies with maple creme filling. Yummy!

I used to buy maple cookies at Safeway, their select store brand. They were the best yum cookies. I don't live in the same state anymore, no Safeway here.
