    Working on a seitan inner crepe starch outer pastie with fermerntend starch and peanut cheese and a starch bacon. Gotta use the 7 pounds of starch per pound of pure gluten. Also grab some amylase and start brewing a mash to go with your mostly flour pastie.

    OMG, I've been making this for 50 years. We just call it, gluten or scallops. It's always on the Thanksgiving n Christmas table. My mother in law taught me this. I have a delicious recipe for a chicken flavored scallops/gluten ☺️ you can make anything out of it 👍

    Let me give you a pro tip. You can put your dough ball in a thick plastic bag and knead it with your feet! I don’t have great arm strength any longer because of a fall I took. It jacked up my elbow a little bit. So I learned this tip form people in Asia who make Ramen or Ramen type dense noodles. This is what they do. I even have a floormat like one of those KitchenAid floor chef cushions that I’ll use specifically for this purpose. So I’ll put my dough in a thick plastic bag. Push out the air and zip it shut. Then put it on my mat and knead it.

    You guys don’t need to knead for 15 mins. It’s the time that is doing the work. Just fold it a few times and let it sit. Fold it every 10 mins or so and you have the same result with little to no work done. It’s called the “stretch and fold technique” often , look it up

    Born and raised in Hawai'i- My grandma used to make this gluten(wheat meat, she called it) the same way back in the 80s. She'd finally cook it up in a delicious teriyaki sauce and in other great recipes.

    @@walkingdead171 wtf? That's not true. I havent been diagnosed with celiacs, however, I am very sensitive to gluten. It causes me stomach problems and brain fog, but isnt bad enough to cause a reaction that needs diagnosing. Modern wheat is so different than ancient strains of wheat, which is why many gluten sensitive/celiacs can eat wheats such as Einkorn and Emmer. The gluten structure of modern day Wheat is much different than what it was 1000s of years ago, and because of how complex it is, more people react to it. It's not a myth, and more people should avoid Modern wheat strains. It's much different than what many of us have evolved eating.

    I found dried and seasoned shiitake mushrooms at Costco & they’re delicious as is, but if you grind them into a powder they make an amazing seasoning & it reminded me of you & your mushroom seasoning. Just had to throw that out there lol

    I second this, I am dying for a vegan corned beef I can make at home. They sell it here in Denver for about $50 a pound, so a cheap seitan alternative would be great!

    I just buy wheat gluten and cut the kneading down to about 2-3 mins. Chronic carpel tunnel limits my ability to do this much work - same for people with arthritis, etc. My fave recipe is "corned beef" (with beet juice for colour) and cabbage, carrots, spuds, and onions/leeks, cooked with the 'roast' in a classical spiced liquid. Search KZread for the recipe (posted 4 years ago by Sarah). I make it with the beet juice and bake it in the oven. It is ridiculously good and makes awesome sandwiches the next day (with hot mustard, horseradish and all the regular veggies) or with just slices of the 'corned beef' and onions and dip it in the leftover jus. With seitan 'roasts' they slice thick when warm but you can get a firm 'roast' to slice very thin if you cool it in the fridge overnight. (Edit; I posted this as a new comment till I found this thread. Enjoy!)

Unless you have celiac disease or are gluten sensitive to a lesser extent than being completely gluten intolerant, wheat products can be easily incorporated into your diet. And humans have done exactly that for thousands of years.

    At my grandfather's funeral, the Buddhist monks were eating vegetarian versions of our traditional cuisine. Among them was seitan. They invited me to try it, and I really liked it. It's incredible seeing it in all of these new contexts.

    In the Caribbean and S.D.A community we just refer to it as "gluten". You should try making some meat with black beans and a combination of other peas. I'd love to see your take on it. Your dish came out amazing btw.

    I was just showing my mom these videos, and she said to me “Lehana, it’s just gluten. You’ve been eating it for years”. So cool. In the Caribbean, and especially in SDA community we refer to this as “gluten”. I didn’t know about all of the different ways to prepare it (apart from stewed or curried). Thanks for sharing!

    someone in our church used to make the best gluten steaks and mushroom gravy for potlucks. I must admit, I always tried to be first in line to get her dish!! Unfortunately, I never did get the recipe because I didn't think I could do all the washing. Seeing how Mark did it doesn't seem to waste too much water!! And he even said he saved the water...wonder what he made with it!!

    @@user-ix2uv9er1v really doesn’t have a specific taste. It tastes like whatever you season it with. Focus is usually on the texture as you can get it to taste like anything. Imagine the most firm tofu, that’s what the texture is like

    I'd make it too but it looks pretty tricky and time-consuming. Making pizza dough is the most I've ever done with flour, I don't think I'd have the patience to go through this whole process like a masterchef. I'm only a low level cook lol

    We got something like this as vegetarian food in SEA (I'm from Vietnam) flavoured with Chicken, pork, beef, any you like with natural vegetarian safe food flavour. It's a huge industry. Most of these ingredients are made from tofu, flours, mushroom etc.

    Well, I had to subscribe after seeing this. I have a Canadian vegan cookbook from the 1930’s that teaches this me method for making “meatloaf”. You’re taking that method to the next level. I’m so excited by this! Although I’m not vegan, or even vegetarian, I’m definitely on a budget. I’m going to have to binge watch your videos. 👏👏👏

    Same, I am in the same boat, had to go flexitarian just because meats expensive and can't always afford it, but this would allow me to make meat dishes on a budget.

    Mark, have you tried not kneading it, and just resting the dough for a few hours covered? It autolyzes the dough, and makes it shreddy after cooking!

    @@steenystuff1075 I have the same problem! There is some initial mixing, which I just use my hands. I break it apart into smaller pieces. (I make huge 5 pound batches)

    Thank you for making it with the normal flour. Not everyone has access to vital wheta gluten. It's actually hard to get!! Plus I can get normal flour for very cheap so it's a very accessible recipe. Also you're very smart for adding the oil.

    That is what I was searching for. Just a normal flour recipe for plant meats. Great to find this. I will use cheap flour and add in some soy flour and/or chickpea flour for higher protein content. Can't wait to try.

    I've been making seitan from flour that needs using for nearly ten years. One thing I noticed was that you didn't wash all the starch out. The washing process for me would take hours as I would continue to wash the dough until the water is pretty much clear! This does make the gluten much harder to work with though, as it is stiff and doesn't want to be manipulated! 😂

    i started a no-meat life (covid came and did it's thing) like almost a year ago and finding this now may save my daily foods!!! in this months all i wanted was to find something that could really replace meats but all the seitan that stores have here don't have that texture you showed, i may do this in a future

    Made this yesterday, and it was great tasting, but due to the amount of work and time I doubt I'll ever do it again. I think all said and done I was at just over 3 hours.... And as a working parent of two active boys, and all of their extra curricular activities, it just isn't feasible. Great video as always, thanks!

    For those looking at this thinking it's gonna replace meat, it's not. The texture is much chewier than meet, it's like a sponge. And the sides won't give the same crunch as cristalised fatty meat. But don't be put off by that, you can pretty much give it all the flavour you want.

    I've made bread out of ground beef before. You shape a couple pounds of ground beef into a loaf and bake it in the oven at 350 for about an hour. Then you slice it like you would a loaf of bread, and voila bread! I serve this to All my vegan friends and they love it.

    I ordered a giant bag of Vital wheat gluten on Amazon. Anthony's brand. I mix it with a little regular flour and some spices to make high protein pizza crusts or a little pancake mix to make high protein waffles. They turn out pretty good and have helped me regain quite a bit of muscle mass after an injury/surgery without putting on a gut. Just maybe a little more dense and chewy. Got to cut the heat back a little and cook it a good bit longer. I had lost a ton of weight and strength there for awhile but this is great for keeping my macros in the professional body builder range.

    Seitan is super cheap and easy to make. I make burgers, steaks, chicken, pork, etc. It's all about how you flavor it. The way this world is going and inflation...people will be thankful for knowing how to make meat alternatives. Packed with protein and no cholesterol.

I just sliced it plain and dropped it into boiling salted water. When firm I put it in the fridge. Grind it and make tacos, slice it and make chicken parm. Easy and cheap. Now I'm old. I don't do this anymore!

    Fun fact, it's a Japanese word seitan セイタン/生蛋, the kanji means raw+ the first kanji from the word protein 蛋白(tanpaku). It should be pronounced say-tawn lol. Hearing the short A used in Japanese words like yAkitori, teriyAki, yAkiniku (yaki meaning grilled) kills me everytime I hear it 😂😅

    When you write "say-tawn" I read that as /sɛ͡itɒːn/ whereas "セイタン" I would read as /sɛːtan/, am I missunderstanding what you mean by "say-tawn" or am I missing something else?
