Thanks! I now know why my posset attempt didn’t work. I’ll try again using sugar rather than erythritol. At my last house I had raised garden beds for my veg garden and in the middle I had a round raised bed with a lavender bush to attract the bees and I planted strawberries around the edge to cascade over the sides. I thought it would look pretty. It did! The lavender bush grew huge and my strawberries were very productive. A chef friend came to visit when I’d been there about a year. I bought a chicken to roast and all the veg we had with it were from the garden. She went absolutely nuts about my strawberries with a hint of lavender. That absolutely nuts of being hit hard with inspiration lol. I will never forget that. She’s moved away now and I haven’t seen her in years, but I’m certain she has strawberries around a lavender bush in her garden. Actually it’s her birthday today. Happy birthday my odd socked friend.

@@denisedachsel4532 I’m now in the suburbs, which I hate. I tried to have a big veggie garden but I gave up because it’s so unpleasant to be outside here. Between being barked at by other people’s dogs for daring to be in my own yard and the traffic noise of a new highway that was built after I moved here, there’s nothing peaceful about pottering in my yard. I feed the chickens, collect the eggs, and get back inside as fast as I can. And then my neighbour’s son moved back in with her and he likes his music and plays it so loud that I hear it in every room of the house for hours and hours on end. So I’ve sold! Haven’t found my next place yet, but I’m looking for 3-5 acres out in the country, about an hour to an hour and a half from here. Somewhere that I won’t hear my neighbours no matter how loud they play their music, where I can have a big garden and grow all my veg, and a big kitchen so I’ve got space to preserve the excess. One bedroom will get set up as a larder to store all the preserved foods and everything that I buy in bulk because I won’t be popping down to the shops regularly! 😂😂 I’ll have a few sheep to mow the grass for me and their lambs will fill the freezer, and hopefully a small cow for milk and to make butter and cheese. And posset! It’s all quite exciting!

Hi, I know you posted this comment 9 months ago but I'm wondering if you managed to get your posset to work and set up? If you're not from the UK your cream will have a lower fat content and you will need to boil your cream for a few minutes to drive off some of the water and increase the fat percentage. The fat content in cream from Britain is 48% whilst it is only 35% in the US. This may be a cause of your posset not setting.

@@richardk5246 hi. I haven’t actually tried again as yet. I’m in Australia, but yes we mostly have 35% whipping cream, not 48% double cream. Occasionally I’ll spot real double cream, but most of the time what they call double cream is 35% and just has extra thickeners 🙄 I did boil the cream but maybe not for long enough. I also used orange rather than lemon so it had less acid. I will try it again at some point with lemon and real sugar. I’ll also put it in much smaller glasses because damn it was rich! 😂😂😂
