How to make Coffee Ice cream, a coffee tart & slow cooked coffee cream just as they were 200 years ago. Americans loved coffee back then as much as we do now! Coffee was cheaper than tea, which is why it became this country's drink of choice. We'll make coffee over the fire and prepare these 3 dishes all while following real early 1800s recipes (or receipts as they used to be called 😊).

    Even though I'm an unapologetic tea drinker I had a great time recreating these 3 recipes from the original instructions (12:03). The coffee cream especially is to DIE FOR oh my gosh! Though I'd no doubt grow too wide if I enjoyed it regularly. Coffee has always been cheaper in the Americas than black or green tea which eventually lead to it being the drink of choice over tea (it had nothing to do with rejecting British imports as these same companies that were importing tea were also importing coffee). Coffee beans were grown in the Caribbean and in parts of Latin America, whereas most tea was grown in China. This made shipping costs tremendously higher for tea due to the shipping costs. Below you will find 3 recipes for early 1800s coffee desserts, translated exactly as they instructed in the originals. Coffee Tart (The Professed Cook, 1812 edition) 1 cup of coffee, prepared 2 heaping tablespoons of flour 1 pint of cream 1/4 cup of sugar + 1 teaspoon for sprinkling on top + 1 teaspoon for the meringue 3 eggs, whole 3 eggs, whites only 1 pie paste Whisk together the flour, cream, a cup of coffee, sugar & eggs into a pot and bring to a simmer. Simmer for half an hour. Place a pie paste into the bottom of a tart pan. Pour the above prepared cream mixture into the paste. Bake at 350 degrees for 30-40 minutes. It will darken in color as it cooks. Once done sprinkle more sugar on top and toast with a salamander, OR put in the oven on broiler until the sugar has melted (which happens quickly so be sure to watch it closely). Beat up the whites of 3 eggs with a teaspoon of sugar till it forms a meringue and put it upon the tart. * To "glaze it with sugar" in the receipt can be interpreted in several ways as the instructions are unclear. This can either mean to form a sugar glaze and drizzle it on top, though bizarre to do over a meringue. Or it could have meant to melt a sprinkling of sugar on top of it. Interpret it however you wish. Coffee Cream (The Professed Cook, 1812 edition) 2 cups of coffee, prepared 1 pint of cream 1/4 cup of sugar Whisk together the coffee, cream & sugar in a saucepan. Bring to a simmer and simmer gently till reduced by at least 1/3. This can take anywhere from 30-60 minutes. Be sure to whisk frequently. Serve in drinking glasses and enjoy as a hot beverage. * "cups" were not yet a standardized measurement in cooking as it is today. When the receipt says to use 3 cups of good coffee it is not referring to 3 standardized cups but rather to whatever drinking cup you happened to have on hand. Coffee Ice Cream (The Cook's Dictionary, and House-keeper's Directory, 1830 edition) 2 cups of coffee, prepared 2 cups of cream 1.5 cups of sugar Whisk together the coffee, cream and sugar together in a saucepan. Bring to a simmer and continue whisking for 5 minutes. Remove from your heat and set aside to cool till it's only lukewarm. Pour into an ice cream churn and churn till frozen.

    I'm also a tea drinker, I just can't do coffee, yet oddly, I love coffee flavored ice cream, candies, etc., and the smell of brewing coffee is wonderful! I hope you get great weather for your wedding!

    I never cease to be thoroughly impressed with your open-hearth, cast-iron-and-trivet cooking skills, Justine. The salamander was a tool I've never seen before, but danged if it isn't useful, albeit specialized. I know this channel is essentially a no-talk, ASMR channel, but I'm sure there are a lot of folks who would love for you to do a series that details all of your dos-and-don'ts, tips-and-tricks for open-hearth cooking.     Yes it was a traditional custard tart so mix coffee with egg custard and it's a little strange. It just wasn't for me.

    I enjoy reading diaries from pioneers. I just read one called, Sod House Days. It was written by a man who settled in western Kansas in 1877. He explains that coffee was rare and extremely expensive. Seems he said 60 cents a pound and he was buying overalls for 90 cents. Rather than real coffee, they'd roast rye, barley, wheat.. whatever grain they had. We are heirloom and ancient grain farmers. Since we grow rye, I've been roasting it and drinking it. Finally kicked my coffee addiction. It's delicious.

    I recently read through the Little House series. Every time you use the coffee grinder I think of how in The Long Winter how Laura and her family had to use the coffee grinder from the time they woke up until bedtime to grine enough wheat for the bread for two meals.     Gawd. I love anything coffee-flavoured. Iced coffee, ice cream, custard (especially in religieuse and bruleed) and even yoghurt. I was devastated when the Australian yoghurt brand Jalna stopped making coffee yoghurt! Loved these recipes! Especially the lemon meringue pie meets creme brulee!

    Before I started following this channel I never would have thought much about desserts with icing on them, or ice cream for that matter. Now though my first reaction after watching this video was, "Oh God, she made icing AND ice cream!? How does she still have enough strength left in her arm to lift a spoon?"     As a former barista, I would love to make some of these desserts like the coffee cream and the coffee tart. It is also interesting to see how they did coffee back then and I bet it was very fresh.     About 10 years ago I found a near identical copper pot with legs in a very old and dilapidated farm house we were prepping to burn down for fire training and was never able to identify its purpose, but thanks to you, the mystery has been solved! 😊

    Thank you for this awesome video. I am glad you showed those gorgeous roosters in the beginning of the video. I have been binge watching your videos and I thought roosters was a soundtrack added for your video..lol. I love the whisk, and the coffee looks so yummy too!
