Instead of water use apple cider in your brine. 1C salt 1C brown sugar + herbs, you can brine up to 1 hour per pound of bird without it damaging the texture of the meat.

Thank you for sharing your recipe on brining. Especially telling us how long to brine for a small turkey.

What is your salt to water ratio? I missed that part.

Hi Jan, I was searching for brine recipes to use for Christmas Turkey and I'll use this one. It looks great and contains ingredients with flavors I love. In addition to the lemon, I think I'll add a few slices of orange as well and a bay leaf or two. Normally, we use a capon or large chicken and I'm looking forward to see how the turkey turns out. Fingers crossed and my family will be the judge..

Please let us know how the family liked it. I too am opting for a sweet citrus. I'm using two sectioned and squeezed mandarins. I would have thrown a tiny bit of smoke in, had I had some, but I did also throw in some mesquite that I have for my BBQ and will put that in the brine and in the oven in a separate container to hopefully give it a little additional flavor / scent. ✌🏼🫶🏼 and happy holidays to you and yours.

Nice video, you can just buy the probes but they will last you a lot longer if you don't submerge them all the way, they are not supposed to get wet were the cable goes into it. Thank you for the recipe is just what I needed.
