Auntie Ah Choon is a self taught chef who for about 20+ years ran a successful Economy Rice Restaurant, Restoran Jia Ling in Skudai, Johor. With no real formal training in the culinary arts, everything she knows about cooking comes from a life time of pure experience, observation and self improvement. She has spent time a great portion of her life cooking in both Singapore and Johor Bahru, Malaysia.     Hi, it's very hard to give an accurate answer for this as quality/brand/age of rice can really affect how much water you need to use. But basically, the most important thing is to not let the rice get too dry while frying, and make sure that there's always moisture for the rice to soak up during the stir frying stage. Once it goes to the steaming stage, the steam will help cook the rice fully. But do make sure to check in at the 10 minute mark to stir the rice so that all the grains of rice can get steamed evenly. i hope this helps! ❤️

    No need to cut away, but if u dun like the skin, u can cut it off after blanching the pork belly. Hope this helps ❤️

    Yes you can! But it might not be as fragrant because lean meat won't have pork fat. Hope this helps 😁
