Thats a great one pot dish! For me, instead of chicken livers, I would add red bell pepper and a small bag of frozen peas.

I'm not knocking it, but this is the "light-side" version, which is fine, but if you wanted a more flavorful "traditional" version I'd do a little more research. It is one of my favorites
I have this cook book and love it so much, I have lost 50 pounds.

Zatarain's is one of the best seasonings for dirty rice
I love chicken livers I grew up eating them breading them and frying them up with lemon 🍋 drizzled on them and a Greek salad Love your dish I'm going to try that thank you much love 💕

I love dirty rice and fried chicken livers.😋🤤 The left over rice is even better stuffed into a bell pepper and a little cheese on top baked in the oven.😋 Yummy!

I have always loved liver and onions, fried chicken livers and dirty rice. My husband would leave home if I cooked any of it. The only dish I can make without him having an attack is dirty rice... He still won't eat it so I don't have to share.❤

I like liver but I can't stand to cook it, grosses me out to handle it even with tongs. I'm fortunate that my hub will cook it, I leave the kitchen when he is preparing it,lol.

Hint: slowly simer your ground beef whole from the package until it gets soft and begins to forks apart easily then flip the whole thing over and repeat until the whole thing just falls apart with little effort. This will retain more flavor and of coarse be way more tender. Instead of little chewy bits of burger. PEACE

Greens and Scallions are different plants. Grandma always had to correct herself everytime she mentioned the onions growing along the east border of the house. She would call them Scallions every time and nobody ever new what she was talking about when she said Greens. Then add "Well actually these ones are Greens, but nobody knows what Greens are. It is just easier to say Scallions." Greens are sweeter and taste more like a white onion. She always had to get after me because I would pick the tops off them and eat them before they matured. Love those times.
I love beef liver, chicken liver and liver sausage...can't understand why people don;t like it.

The french word describing a few veggies is called mirepoix , usually carrots, celery and onions. The holy trinity that Paula is using includes onions, celery, and-instead of carrot-a bell pepper. This is used as a base of most soups and stews made in Louisiana, including gumbo.

My mom loved liver and onions and fried chicken livers. I liked them when she made them but I've made liver and onions and I'm not doing something right. My mom has been gone for 42 years. I have eaten fried chicken livers a few times since she passed away but my kids would disown me if I tried sneaking them in. I would be told "chicken livers are for catching fish"! They never had the opportunity to eat my moms as they were born after she passed away. Do you have any suggestions for a substitute?

Haha And potatoes and corn aren't even really vegetables..well I guess corn would be. It's about my least favorite vege. Potatoes are yummy but they seem mostly like a starch to me. Taste buds are a real thing; I can't stand chicken livers, bacon steak, etc I feel so much better after giving up meat. I always worried about what people thought if I didn't eat it, but we worry too much about what others think. Green beans and peas are my favorite, along with Brussel sprouts, squash, peppers and spinach. I think tastebuds and textures truly determine what we can stomach.

I never eat brown rice… white is the best
I didnt see you add the green onions.. But you should do the trinity.. and add some pork to it.. as well and some creole seasoning.. and a touch of water when you add the rice and then green onions make it fresh allow to simmer a bit.. the meats should have almost disintegrated and leaves "Dirty Specs" on the rice.. Hence the name.. "Dirty Rice"
Where is the dish washer in Paul’s gorgeous kitchen and did they ever fix the big stove/oven behind Paula. Please inform.
Lol...my ex made some kind of chicken meal with mayo on it. My friend was eating supper over at our house and that meal was gross. We were on back porch and we put it in my corn plant appropriately named Cornelius and he died. I had him for 25 years...Im so sorry Corny!!!

KZread really is hard sometimes. I cant imagine how many times my comment has been lost because switching from the app to a browser to check references or spelling. I think the reason I acquired a taste for it was one I found out my iron was low a long time ago, I found out they're very high in iron, I started eating it. I rarely have them though, only cooked them 1 time and never again I don't like handling thing, yuck! Anyways my girls doing good, just a little swollen but not hurting as much. Glad its over, and going back to work tomorrow. Now where's Stacey? Lol

Sometimes, for me, it's just really frustrating to watch these demo's, and all the misinformation she speaks, that I just as soon not say anything, or even watch. It's been happening more and more frequently, so like Mom always used to say, If ya don't have anything good to say, it's best to say nothing! Good advice! I especially don't enjoy the reruns on Thursday or Friday, so you won't find me here then, either. Hope you both are well, and Charity, happy to hear the dental procedure was a success!

@@stacey5925 Your mother sounds like she was a wise woman. I do have a question though, what makes this a slimmed down version? What would you do different for "the full thing"? Is it the type rice she used?
