I travelled with my girlfriend throughout New Zealand and we visited a lot of Lord of The Rings locations.

00:44 Mordor with Mt. Doom: Mount Ngarahoe but you want to go there you should do the Tongariro crossing - 23km hike that I really recommend www.tongarirocrossing.org.nz/

02:57 Rohan Edoras: Its filmed on Mt. Sunday. If you go by car take notice that there isn't that much cellphone signal and its almost gravel road for 2hours.     No organized hike trail that can take me through it all? Also: what about Fangorn forest? And where Aragorn, Gimli and Legolas find the burning corpses and then Aragorn breaks his toe on a helmet, and then they get surrounded by Rohirrim?

    There is one company that covers the whole island but I have no experience with them: www.redcarpet-tours.com/ There are some local touring guides that do smaller tours as well in Wellington and Queenstown.
