Hey Pete great vid. I handle tech support for KME and really enjoy your testing and sharpening vids. When folks have questions about angles and toothy vs polished type stuff I always mention your channel as a great source for info. Couple of notes. The deluxe kit actually comes with 10 stones, plus a roo strop with 4 micron cbn. You’re missing the 100 grit diamond stone which helps clean up the 50 grit scratches a little faster than the 140. It also comes with three ceramic stones and one Arkansas stone. As far as the scratches go, we sell a stop collar that keeps the guide rod from slipping up on the blade. A 1/4” drill bit stop collar that you can find locally will work just fine too. Even a rubber band works, but I know you mentioned you don’t mind the look. The longest blade we can sharpen clamping once is 10”. For longer blades we clamp again with overlapping sections. I’ve sharpened my Rtak2 no problem. If you still have yours throw it on there and check it out. Thanks for the great feedback!!

@@mickkeim4142 I have sharpened my 8" chef's knife on my KME with outstanding results. Single mounting with no need to reposition the knife. I did pivot the stone holder and guide rod from tip to choil before sharpening to make certain I could reach the entire length of the blade. As I recall, I was not able to mount the knife dead center in the clamping jaws. I did get an evenly sharpened edge with a mirror polish.

I have been looking at adding the KME to my sharpening line up which is what brought me to your review. I haven't actually finished watching yet but want to say THANK YOU for pointing out that the angle will vary depending on the size of the knife. Almost no one else, particularly manufacturers, acknowledge this point. Having a knife sharpening business as a side gig, a major consideration is getting a customer's knife as sharp as possible in an efficient manner. Being off by a degree or so from the existing angle can significantly lengthen the sharpening process and/or cause major frustration if you use a combination of different sharpening equipment for a knife and are trying to hit the same angle on all your platforms.

First got the sharpmaker which is good for touch ups. Nick calls it the sharpkeeper meaning it's good for getting knives that haven't dulled too much back to sharp. But it relys on you keeping the knife vertical and is subject to user error. I then bought a Lansky in an effort to save money but it was a royal pain. Returned it the next day and ordered a kme standard kit plus the base and 6 and 3 micron lapping films as per Nick's recommendation. I always finish up with the knivesplus preloaded strop block. I ended up purchasing the beast stone as well. Like you said, it does require patience. Put on some music and pop open a beer and go to work. The most important thing is to get a good burr with the first stone you use. After that you're just continuing to refine the edge. Another tip: clean the knife well before you switch from the stones to the films or else the films will get extremely dirty and need to be changed too soon. I do the stones dry and the films with a small bit of oil. The system definitely isn't cheap but to me the results are worth the price. Even though it's not necessary to have it, I love getting that mirror polish.

I ran a knife sharpening machine. The guys that sharpened their own knives on the hand stone would bring their knives to me every 1 to 2 weeks. They all said they kept a sharper knife on the hand sharpening stone. This was a Norton Tri sided stone. It held oil and was a nice setup. I never learned how to use it tho.

I have spent a LOT of time (wasted) getting the perfect mirror edge. I have all the fine grits that are no longer used. I do use a KME type sharpening rig mainly to keep the exact angle on the blade. I have discovered that a small toothy edge cuts much better. My 600 finish grit stone is the best for me. After the last cut, a few strops on leather with green compound to remove the burr and I have a great long lasting cutting edge knife.

I know what you mean about always wanting to just buy a new knife instead of knife related stuff. Whenever I had the money for a KME or something, I always just thought to myself that I could just buy a new knife instead and I always did. I finally got over that, and was like you know, I have all this money into my knives and I'm sharpening them on a lansky kit.... I really should do my knives a favor and invest in a real sharpening system. So I got my KME, got a few extras, and now i'm getting mirror polished edges and I'm glad I made the leap.

But I have a similar problem where I'll get a new stone in and have nothing that needs sharpening. All this sharpening equipment, not enough knives. That's when I'll start buying knives again.

I have the KME. I'm basically satisfied....But, quite honestly, with some experience and consideration, I think I would have been better off with the Hapstone V7, which is now available at Gritomatic. The v7 is larger and all metal (more substantial metal, too). It has an interested knife holding system using magnets -- you do need to see a good video its use to take full advantage of it. The best thing is that it can use almost ANY size stone (but is intended for 1x6 inch stones -- but the stone holder is adjustable). KME uses 1x4 stones. With the v7 you have FAR larger selection of stones. Even with the V7 though, I WOULD keep using the KME lapping tapes -- they're good and they work. The Hapstone V7 is only a small bit more money -- wisely spent, IMO. EDIT: And a cheap digital angle cube is well worth having with ANY system, IMO. I have the "AccuRemote" which is slightly higher priced at $32, but well worth it.

Well...wouldn't run on my tablet, but ran fine on my PC. I blame this entirely on Google. AS FOR THIS VIDEO...WELL DONE! As are all of your videos. Concise. Organized. Intelligently reviewed products. Thank you for them! The KME is by far the best, and easiest to use of all of the knife sharpening systems/devices I have used including the Lansky, Wicked Edge, Crock Sticks, Bob Kramer Zwilling Whetstones (I do NOT know ho to stone sharpen properly), and my Neivert Whittler dental instrument sharpener. I have gotten perfectly sharp, mirror polished edges every time with my KME. The KME Chosera stones also work great. I do keep an 11/32 inch closed end wrench in my kit to snug up the guide rod nut on the stone holder when I assemble it each time. Has never loosened while sharpening. I also keep a white Hi-Polymer eraser in my kit to clean the diamond stones. Works better than dragging a rag across them. Again., thank you for all of your great and informative videos!

Hi mate, great channel. You be inspired me a a lot your a joy to watch . Ive just purchased a KME kit and I'm worried...when the jaws are shut (without a knife in them) the fronts of them are not flush...it looks like one of them is machined back too far on a crooked angle (unparralell to the molded lines) and the rubber is overhanging . I realise this may not effect the sharpening ability, but for the price I've paid I'd expect not to have this issue. I'd really appreciate your thoughts on this... is it normal? It love to send you a photo. Thanks mate Ben. Hornsby Syd

Nice review, but just so you know the clamp moving on the base will not change the sharpening angle,as long as the knife is in the clamp not moving is all that matters. The clamp and the knife blade in the clamp is your triangle which gives you what degree you are sharpening at. Take care

Ner Montiero diamond stones last almost forever and you don't even need to level them. For a beginner a diamond stone is amazing.

What is the lower angle you can use on the KME ? I like to reduce the shoulder of the edge with some strokes at 10dps to make stropping easier at a low angle.

You don't get a shallower angle on a longer blade as long as it is a straight edge and as long as you put the straight part of you edge perpendicular to the "mounting claw". It is only when you get to the curve of the blade that you change your angle. There were some other youtuber that showed this in a video after that he first had also claimed that the angled got shallower on large blades. Don't remember who it was now. EDIT: I found the video: kzread.info/dash/bejne/h56jtq6So66tac4.html from @ Simple Little Life

Batscat yes. The angle guide on the kme has a lot less (for lack of a better word ) slack in precision. There is also a website called gritomatic which has stones for the kme up to 30’000 grit.

You can run them dry or with oil. I started with oil but I think I'm starting to prefer my stones dry. Using oil is fine but it causes all the material you are removing to sludge up and it takes longer to get results. Plus that slurry can scratch your blade if you're not too careful. It's really just personal preference. I like mine dry, others might not. Same goes for the lapping films

  • @CedricAda

yeah its intentional - it allows lower angles cos the metal square is above rather than below. I use an angle app to do the actual measuring so s’all good 😊

  • @mcbrite
    @mcbrite2 жыл бұрын

I think I'll get the Wicked Edge instead... Feels to me like a "more than the sum of it's parts" scenario. You set the angle once, maybe measure it for safety and then just blast through the stones until done... I'm sure that ends up being more than twice as fast as the kme AND you alternate the Strokes by default, that must be at least a tiny bit better than doing dozens of stokes on 1 side and then having to awkwardly switch the blade over... So unless the stones are massively better on the KME, I can't really see where it would win against WE?

I find it so funny that everyone wants a mirror polish on their knives or there not sharp , you don't have to have a mirror polish on your knife in order for it to be sharp. First you need to learn how to sharpen a knife and learn how to use whatever kind of sharpener you have properly. There is a friend of mine who has a mirror polish on every knife he owns, I mean you can comb your hair in them , but his knives are dull as hell , why ?? Because he never learned how to sharpen ..LOL , Its was so funny , ha, ha .. It was like he put a mirror polish on both sides of a blank blade . Learn your equipment , practice makes perfect..

All those ultra low grit films really don't give you anything useful except to impress your friends. Even a straight razor that you shave your face with is razor sharp with 8000 grit and some stropping. Just something to blow your money on.
