Gula apong is sugar from the wild nipah palm tree. Gula Apong is different from gula melaka as gula melaka comes from the coconut plam tree. The taste is slightly different. We got to learn about this specific palm sugar making in our backyard, Kuching
Gula apong is usually used in desserts and sweet drinks in Sarawak but can also be used in savoury dishes, like in sambal chilli. It's a little known Malaysian food but well known across the state of Sarawak. In Java and Bali, gula apong is known as gula nira.
