You never see crushed olives being sold. Even the olives don't like being beaten LOL I speak Portuguese but I will try to explain it in English. I am a grandmother and it was how my grandmother treated olives more than 50 years ago. My grandmother was calm, peaceful and affectionate, she never hit anyone, not even the olives LOL The olives are not crushed, we make a vertical cut in each olive and cover them with chlorine-free water. CHANGE THE WATER EVERY 24 HOURS - FOR 10 to 15 DAYS, and put them in a dry place without light after 10 or 12 days - TASTE TO SEE IF THEY ARE BITTER after 10 days 2nd PHASE - NOW THE FIRST SALTING PHASE - 1st BRINE FORMULA (Salting) 80 gr. Salt x per each 1 Liter of Water DISSOLVE THE SALT BY STIRRING But to confirm the salt, WHEN A RAW FRESH EGG FLOATS, THE AMOUNT OF SALT IS EXACTLY RIGHT - BUT when I saw your eggs, the egg has to prove not to float in water without salt LOL) - PUT THE OLIVES IN THE BRINE FOR 3 DAYS - CHANGING THE BRINE EVERY 24 HOURS (From the first 24 hours to the second 24 hours, new brine and new egg ;) to test the salt. From the second 24 hours to the third 24 hours, another new brine and another egg to test the salt. After the third 24 hours (3 days), the phase of not touching olives with your hands or metal objects ) 3rd and Final PHASE TO PRESERVE - SALMOURA FORMULA (to Store the olives): 40 grams of salt for each 1 liter of water if it is 3 liters of water it is 120g of salt Place the olives in a jar or glass container with a lid. NEVER METAL or Place the olives in several jars without touching them with your hands (non-metallic spoon or with gloves) and cover the olives with the 2nd mixture of 40% salt - COVERED WITH A THIN LAYER OF OLIVE OIL to BETTER PRESERVE THEM, OR to have a MILDER Flavor use SUNFLOWER OIL Store the jars in a dark and cool place, no need for a refrigerator. I hope to have explain it without many spelling mistakes ;) or any very strange English lol

I guess it depends on taste. I also do the ones with the cut, unfortunately I don’t have any this year to conserve like that.. poor year for olives on our land. @@The-QuintaThere are always "new ways" to fasten things, with a brick you can smash several in one time but since I remember eating olives, more than 60 years ago, at my grandmother's house, the olives kept the same shape as on the tree. Even sitting, supposedly resting, I remember that my grandmother was always busy, sewing something, shelling peas, shelling dry beans or broad beans, or cutting the olives... today the image of rest is doing everything quickly, even if it means crushing the olives a dozen at a time and then say that's how it was done... and not everyone did it that way ;) For some 20 years is "tradition", for me has to be more than half a century ago, to be the old way of doing something ;) Poor years for olives not only on your land, and poor years for many other things, not only for olives ;) By the way , the recipe is to preserve, then using some of the Already Preserved Olives you can make jars with whatever you like best, adding Garlic or Red Peppers, Black Pepper, Thyme, Bay Leaf... whatever you want, but it is to be consumed quickly, not to be kept one year, two years... extend the deadline to have olives for a next year with fewer olives.

You need a rest guys! You have all flogged yourselves to get the village house completed and now you need some time to recoup your energy and focus on your house for a while. Loving Andrew’s channel too 😊

Hi again, re unplanted section at gate . How about buying a few bright Bougainvillas? That will be the wow factor when they grow and flower against that fence. Your Loquat a dark green focal point. Just add a few handfulls of compost to enrich the soil and make a well around it . A few buckets of water in Summer. Why dont you do the poppies, cornflowers, shasta daisies that you love Christina? Even though the weeds will grow, and once poppies etc have flowered and dried, and shed their seeds, there will be less weeds each year. The bright bougainvillas will be awesome and that area will come alive.💐💐💐💐💐💐🌼🌼🌼🌼🌼🌼🐝🐝🐝🦋🦋🦋🦋🐞🐞🐞🐞🐛🐛🌻🌻
