Ingredients:-
3 1/3 cups Everclear alcohol 190 proof or vodka (750 ml)
Peel of 6-7 lemons
3 ounces lemon peel preferably fresh-picked or organic (85 grams)
3 cups sugar (625 grams)
3 1/3 water (750 ml)
Directions:-
Step#1- Rinse lemons of any debris. Dry and using a peeler remove peel being careful not to remove the pith.
Step#2- Add alcohol in an airtight glass jar and add lemon peels.
Step#3- Cover the glass jar with aluminum foil and store it in a dark cool place. (I usually put it in my pantry).
Step#4- Let it sit (macerare) for 3 to 7 days. The longer the better.
Step#5- In a pot mix water and sugar and bring to a boil. Once the sugar has melted remove it from heat and let it cool completely.
Step#6- Strain peels from alcohol and mixes them with sugar syrup. Bottle and keep in the freezer until ready to serve. I also keep limoncello glasses in the freezer.
It can be enjoyed immediately. I use limoncello for my desserts, over ice cream or strawberries. So many delicious ways to enjoy anytime.

Hello Syl, One of my favorite is mandarinetto. My aunt would always make a few bottles to bring back with me. She passed away this past October 🙏🏻 The quality of the citrus is very important, the fresher the better. Let me know how it turns out! Cari saluti 🥰

Everclear is what makes the best that's what use but I'm going to share this with my to see how it differs from your recipe... Also do you know the name of you marble countertop it's really mice

I have made limoncello in the past & they say to let the peels & Everclear sit for a month. Is that a little overkill ? I like your recipe.

Thank you for watching! Absolutely an overkill! The trick is fresh beautiful citrus. I think a week is plenty of time. You’ll see the citrus becomes colorless and very stiff because all the flavor are released in the alcohol. Keeping it a month is too much. Let me know how it turns out. 🥰🍋🍋
if you take out and add the lemon peel from the alcohol and put them into the boiling sugar, it extracts even more lemon flavours, .
Does it have to be so much sugar? What would happen if I used less?

Must use organic lemons, right? Due to the waxy coating on non-organic ones.

Sorry to hade missed your comment. Not at all because it gets diluted with the simply syrup
Next time pour into 4 cup Pyrex to get into bottles 👌🏼❤️ 🍋

I am going to make limoncello. Pardon me but you made an error of placing the cleaned lemon back in the bowl with the debris that was cleaned off and with unclean lemons. 😊
