涼瓜炆排骨,66蚊一字排
材料:
一字排排骨1磅
涼瓜(大)2個(約2斤)
蒜頭4粒
蔥2條
薑1小舊
處理:
1. 一字排,清水洗乾淨,擎乾水。
2. 一字排調味:
a. 生粉1茶匙半
b. 油1茶匙
c. 鮑魚汁1茶匙
d. 紹興酒少量
e. 生抽1茶匙
f. 糖1茶匙半
撈勻,醃30分鐘。
3. 蒜頭,去皮,清水洗乾淨。
蔥,切去兩端,清水洗乾淨。
薑,去皮,清水洗乾淨。
4. 砧板,清水洗乾淨。
5. 薑,切片,放排骨內。
蔥,切段,放碟內。
蒜頭,放排骨內。
6. 涼瓜,打直1開2,去籽,切去兩端,打斜切片,放大碗內。
7. 在涼瓜內加入粗鹽1湯匙及少量清水,用手輕輕揸出苦瓜汁,清水沖洗乾淨,輕手壓走水分。
烹調:
1. 大火在煲內煲滾清水1湯碗。
2. 加入排骨、薑片及蒜頭,大火滾起,轉中慢火,炆20分鐘。
3. 排骨已炆好,熄火。
4. 涼瓜,白鑊,大火烘乾。
5. 涼瓜,輕手攪動一下,放蔥段,炒勻。
6. 加入排骨及所有材料,炒勻,約炆1.5分鐘。
7. 排骨已吸收所有味道。
8. 完成,上碟,可享用。
Braised pork ribs with bitter melon:
Ingredients:
Pork ribs 1 lb
Bitter melon (large) 2 Nos (about 2 catty)
Garlics 4 Nos.
Green onion 2 pcs
Ginger (small) 1 No.
Preparation:
1. The pork ribs, rinse with tap water. Drain.
2. Season the pork:
a. Tapioca starch 1.5 tsp
b. Oil 1 tsp
c. Abalone sauce 1 tsp
d. Shaoxing wine little
e. Light soya sauce 1 tsp
f. Sugar 1.5 tsp
Mix well. Season for 30 minutes.
3. Garlics, get them peeled. Rinse with tap water.
Green onion, cut both ends. Rinse with tap water.
Ginger, get it peeled. Rinse with tap water.
4. Chopping board, rinse with tap water.
5. Ginger, get it sliced. Put in the pork.
Green onion, cut in lengths. Put on plate.
Garlics, put in the pork.
6. The bitter melon, divide into 2 shares vertically. Remove seeds. Cut both ends. Slantly slice. Put in a big bowl.
7. Add in cooking salt 1 tbsp and little water into the bitter melon. Squeeze lightly to release the melon juice. Rinse thoroughly. Squeeze it lightly.
Steps:
1. Heat up a big bowl of water at high flame in pot.
2. Add in pork ribs, ginger and garlics. Heat up at high flame. Turn to medium~low flame and braise for 20 minutes.
3. Pork ribs have been braised well, turn off fire.
4. Bitter melon, plain wok, no oil, dry it up at high flame.
5. Bitter melon, stir it lightly. Put green onion, fry well.
6. Add in pork ribs and all the ingredients, fry well. Braise for about 1.5 minutes.
7. Pork ribs have been absorbed all the flavours.
8. Complete. Put on plate. Serve.
